🍰 Vegan Mandarin Semolina Cake

Ingredients
- Canned mandarins 175 g
- Sugar 100 g
- Vanilla sugar 2 packets
- margarine, vegan 130 g
- Applesauce 6 tbsp
- Fine semolina 150 g
- Wheat flour, Type 405 150 g
- Baking powder 1 packet
- Cinnamon pinch
- Hazelnut kernels, ground 75 g
- Oat drink 150 ml
Instructions
- 1. Preheat the oven to 150 degrees Celsius with fan.
- 2. Drain the mandarin segments in a sieve to remove excess liquid.
- 3. Add sugar, vanilla sugar, and soft margarine to a large bowl.
- 4. Beat the ingredients with a hand mixer until creamy and fluffy.
- 5. Stir in the apple puree gradually.
- 6. Add semolina, flour, baking powder, cinnamon, hazelnuts, and oat drink.
- 7. Mix everything until you have a smooth batter.
- 8. Line a baking tray with baking paper.
- 9. Spread the batter evenly over the tray.
- 10. Distribute the drained mandarin segments over the batter.
- 11. Bake the cake for about 45 minutes in the preheated oven.
- 12. Allow the cake to cool down completely.
- 13. Cut the cake into squares.
- 14. Serve the pieces and enjoy.
