  1. 1. Wash the cucumber thoroughly and cut off the hard ends.
  2. 2. Cut the cucumber lengthwise into four strips and slice them into bite-sized pieces.
  3. 3. Wash the tomatoes and cut them into quarters.
  4. 4. Cut the onion in half and remove the dry outer skin.
  5. 5. Slice the peeled onion into thin rings.
  6. 6. Cut the vegan Genießer block into small cubes.
  7. 7. Wash the lemon and cut it in half.
  8. 8. Squeeze the juice out of the half lemon.
  9. 9. Wash the parsley and shake off excess water.
  10. 10. Pick the parsley leaves off the stems and chop them finely.
  11. 11. Whisk the olive oil with two tablespoons of the lemon juice in a large bowl.
  12. 12. Season the dressing with salt and black pepper to taste.
  13. 13. Add the cucumber pieces, tomatoes, onion rings, Genießer cubes, parsley, and black olives to the bowl.
  14. 14. Toss all ingredients thoroughly with the dressing.
  15. 15. Serve the salad immediately.
