🥗 Fresh vegan Greek salad

Ingredients
- courgettes 1 pc.
- cherry tomatoes mix 500 g
- onions, red 1 pc.
- vegan feta cheese 150 g
- lemons 1 pc.
- parsley, fresh 20 g
- olive oil 3 tbsp
- salt pinch
- pepper, black ground pinch
- olives, black 40 g
Instructions
- 1. Wash the cucumber thoroughly and cut off the hard ends.
- 2. Cut the cucumber lengthwise into four strips and slice them into bite-sized pieces.
- 3. Wash the tomatoes and cut them into quarters.
- 4. Cut the onion in half and remove the dry outer skin.
- 5. Slice the peeled onion into thin rings.
- 6. Cut the vegan Genießer block into small cubes.
- 7. Wash the lemon and cut it in half.
- 8. Squeeze the juice out of the half lemon.
- 9. Wash the parsley and shake off excess water.
- 10. Pick the parsley leaves off the stems and chop them finely.
- 11. Whisk the olive oil with two tablespoons of the lemon juice in a large bowl.
- 12. Season the dressing with salt and black pepper to taste.
- 13. Add the cucumber pieces, tomatoes, onion rings, Genießer cubes, parsley, and black olives to the bowl.
- 14. Toss all ingredients thoroughly with the dressing.
- 15. Serve the salad immediately.
