🍰 Moist Vegan Spice Cake with Plum Sauce Glaze

Ingredients
- all-purpose flour, Type 405 250 g
- almonds, ground 75 g
- sugar 100 g
- baking powder 0.5 packet
- vanilla sugar 1 packet
- gingerbread spice mix 3 tsp
- cinnamon 1 tsp
- cocoa powder 2 tbsp
- salt pinch
- oat drink 250 ml
- plum puree 125 g
- sunflower oil 3 tbsp
Instructions
- 1. Preheat the oven to 180 degrees Celsius with fan setting.
- 2. Add all dry ingredients for the batter into a large bowl.
- 3. Add the oat drink, 50 grams of plum sauce, and one tablespoon of oil to the dry ingredients.
- 4. Mix everything until you have a smooth and pliable batter.
- 5. Grease a loaf pan with two tablespoons of oil.
- 6. Lightly dust the greased pan with flour.
- 7. Pour the batter evenly into the prepared pan.
- 8. Bake the cake in the oven for about 40 minutes.
- 9. Take the cake out of the oven and let it cool down for a short while.
- 10. Turn the cake out of the pan onto a plate.
- 11. Spread the remaining plum sauce over the cooled cake.
