🍽️ Vegan Dürüm Wraps with Tofu Gyros

Ingredients
- Red cabbage, fresh 0.25 pc.
- Salt pinch
- Sugar pinch
- Cucumbers 0.25 pc.
- Vine tomatoes 100 g
- Onions, red 1 pc.
- Iceberg lettuce 150 g
- Parsley, fresh 20 g
- Garlic cloves 1 pc.
- Organic limes 1 pc.
- Soy yogurt 200 g
- Dill, chopped 1 tsp
- Pepper, black ground pinch
- Dürüm Wraps 4 pc.
- Oil 2 tbsp
- Tofu, plain 400 g
- Smokehouse BBQ Rub 4 tsp
- Italian herbs, dried 2 tsp
Instructions
- 1. Quarter the red cabbage and remove the hard core.
- 2. Remove outer leaves and slice the rest into thin strips.
- 3. Place the red cabbage strips into a bowl.
- 4. Sprinkle them with salt and sugar.
- 5. Knead the mixture vigorously by hand.
- 6. Set the red cabbage aside.
- 7. Wash the cucumber and the tomatoes.
- 8. Dice the cucumber and tomatoes into small cubes.
- 9. Halve the onion and peel it.
- 10. Slice the onion into thin strips.
- 11. Cut the iceberg lettuce into coarse strips.
- 12. Wash the lettuce strips and dry them in a salad spinner.
- 13. Wash the parsley and shake it dry.
- 14. Pick the parsley leaves off the stems.
- 15. Finely chop the parsley leaves.
- 16. Peel the garlic.
- 17. Finely chop the garlic as well.
- 18. Halve the lime.
- 19. Squeeze the juice from the lime.
- 20. Place the soy yogurt into a separate bowl.
- 21. Add the chopped parsley and dill.
- 22. Add the chopped garlic.
- 23. Stir the yogurt mixture well.
- 24. Add the lime juice.
- 25. Season the sauce with salt and pepper.
- 26. Slice the tofu into thin strips.
- 27. Place the tofu strips into a bowl.
- 28. Add two tablespoons of oil.
- 29. Add the Smokehouse BBQ seasoning.
- 30. Add the Italian herbs.
- 31. Mix everything well until the tofu is seasoned.
- 32. Preheat the oven to 180 degrees Celsius fan-assisted.
- 33. Place the Dürüm wraps in the oven.
- 34. Warm the wraps for about one minute.
- 35. Heat two tablespoons of oil in a frying pan.
- 36. Set the heat to medium level.
- 37. Fry the tofu gyros for about six minutes.
- 38. Spread the yogurt sauce over the warm Dürüm wraps.
- 39. Fill the wraps as desired with the prepared ingredients.
- 40. Drizzle the filled wraps again with a little soy yogurt sauce.
- 41. Roll the wraps up tightly.
- 42. Cut the wraps in half.
- 43. Serve the vegan Dürüm wraps.
