  2. 2. Remove outer leaves and slice the rest into thin strips.

  4. 4. Sprinkle them with salt and sugar.
  5. 5. Knead the mixture vigorously by hand.
  6. 6. Set the red cabbage aside.
  7. 7. Wash the cucumber and the tomatoes.
  8. 8. Dice the cucumber and tomatoes into small cubes.
  9. 9. Halve the onion and peel it.
  10. 10. Slice the onion into thin strips.
  11. 11. Cut the iceberg lettuce into coarse strips.
  12. 12. Wash the lettuce strips and dry them in a salad spinner.
  13. 13. Wash the parsley and shake it dry.
  14. 14. Pick the parsley leaves off the stems.
  15. 15. Finely chop the parsley leaves.
  16. 16. Peel the garlic.
  17. 17. Finely chop the garlic as well.
  18. 18. Halve the lime.
  19. 19. Squeeze the juice from the lime.

  34. 34. Warm the wraps for about one minute.
  35. 35. Heat two tablespoons of oil in a frying pan.
  36. 36. Set the heat to medium level.
  37. 37. Fry the tofu gyros for about six minutes.
  38. 38. Spread the yogurt sauce over the warm Dürüm wraps.
  39. 39. Fill the wraps as desired with the prepared ingredients.
  40. 40. Drizzle the filled wraps again with a little soy yogurt sauce.
  41. 41. Roll the wraps up tightly.
  42. 42. Cut the wraps in half.
