🍳 Vegan Curry-Date Dip with Rice Cakes

Ingredients
- onions, red 0.5 pc.
- soft dates, dried and pitted 100 g
- cilantro, fresh 5 g
- lemons 1 pc.
- vegan fresh spread, plain 150 g
- curry powder 1 tbsp
- cumin pinch
- salt pinch
- pepper, black ground pinch
- rice cakes, plain 8 pc.
Instructions
- 1. Cut the onion in half and remove the outer skin.
- 2. Dice the onion very finely.
- 3. Remove the pits from the dates and chop them finely.
- 4. Wash the coriander leaves and shake them dry.
- 5. Chop the coriander finely.
- 6. Cut the lemon in half.
- 7. Squeeze the juice from one half of the lemon.
- 8. Place the vegan spread into a bowl.
- 9. Add the diced onion to the bowl.
- 10. Add the chopped dates to the bowl.
- 11. Add the chopped coriander to the bowl.
- 12. Add one tablespoon of lemon juice to the bowl.
- 13. Add curry powder to the bowl.
- 14. Mix all ingredients in the bowl thoroughly.
- 15. Season the mixture with cumin.
- 16. Season the mixture with salt.
- 17. Season the mixture with pepper.
- 18. Taste the dip mixture and adjust the seasoning if necessary.
- 19. Serve the finished curry-date dip with rice cakes.
