  1. 1. Preheat the oven to 220 degrees Celsius with top and bottom heat.
  2. 2. Wash the peppers and cut them in half.
  3. 3. Remove the stem and seeds from the pepper halves.
  4. 4. Place the pepper halves cut-side down on a baking sheet lined with baking paper.
  5. 5. Roast the peppers in the oven for about 15 minutes until the skin starts to turn black.
  6. 6. Take the peppers out of the oven.
  7. 7. Cover the hot pepper halves with a damp kitchen towel.
  8. 8. Let the peppers cool down under the towel.
  9. 9. Peel the cooled skin off the peppers.
  10. 10. Cut the roasted pepper into coarse pieces.
  11. 11. Wash the coriander and remove the coarse stems.
  12. 12. Finely chop the coriander.
  13. 13. Put the soy yogurt into a bowl.
  14. 14. Add the chopped coriander to the soy yogurt.
  15. 15. Season the mixture with salt, pepper, and paprika powder.
  16. 16. Stir everything well and taste to adjust the seasoning.
  17. 17. Separate the lettuce leaves from each other.
  18. 18. Wash the lettuce leaves and let them drain well.
  19. 19. Clean the mushrooms with kitchen paper if necessary.
  20. 20. Slice the mushrooms.
  21. 21. Wash the tomato and remove the stem.
  22. 22. Slice the tomato.
  23. 23. Heat 2 tablespoons of oil in a pan on high heat.
  24. 24. Fry the burger patties for about 8 minutes until golden brown.
  25. 25. Take the finished patties out of the pan and place them on a plate.
  26. 26. Heat another 1 tablespoon of oil in the pan on medium heat.
  27. 27. Fry the mushroom slices for about 3 minutes.
  28. 28. Take the mushrooms out of the pan.
  29. 29. Halve the burger buns.
  30. 30. Toast the bun halves cut-side down in the hot pan for about 2 minutes until golden brown, if desired.
  31. 31. Spread the coriander soy yogurt cream on the bottom half of the burger bun.
  32. 32. Place the lettuce on the cream.
  33. 33. Place the burger patty on the lettuce.
  34. 34. Place the roasted pepper pieces on the patty.
  35. 35. Place the tomato slices on the peppers.
  36. 36. Place the fried mushrooms on the tomato.
  37. 37. Spread the cream on the top half of the burger bun as well.
  38. 38. Place the top half on the burger.
  39. 39. Serve the vegan burgers with roasted peppers.
