  2. 2. Cut the ciabatta into four equal pieces.
  3. 3. Bake the ciabatta pieces for about 8 minutes until golden brown.
  4. 4. Wash the tomatoes thoroughly.
  5. 5. Slice the tomatoes.
  6. 6. Wash the arugula.
  7. 7. Spin-dry the arugula.
  8. 8. Whisk olive oil, dark balsamic vinegar, mustard, Italian herbs, and sugar together in a pot.
  9. 9. Bring the mixture to a boil over medium heat.
  10. 10. Mix cornstarch and 2 tablespoons of water in a small bowl.
  11. 11. Pour the starch-water mixture into the pot while stirring.
  12. 12. Remove the pot from the heat source.
  13. 13. Season the sauce with salt and pepper.
  14. 14. Let the sauce cool down.
  15. 15. Heat oil in a frying pan over high heat.
  16. 16. Fry the vegan patties for about 3 minutes.
  17. 17. Flip the patties.
  18. 18. Place the vegan cheese slices on the patties.
  19. 19. Close the lid of the frying pan.
  20. 20. Let the cheese melt for about 3 minutes.
  21. 21. Slice the ciabatta open.
  22. 22. Place the patties on the ciabatta.
  23. 23. Distribute the tomato slices on top.
  24. 24. Add the arugula.
  25. 25. Drizzle the cooled sauce over everything.
  26. 26. Close the burger.
