🍰 Vegan Baked Apples with Creamy Vanilla Sauce

Ingredients
- Apples, red 4 pcs
- Lemons 1 pc
- Marzipan base 150 g
- Hazelnut kernels, chopped and roasted 50 g
- Raisins 20 g
- Apricot jam 2 tbsp
- Oil 1 tsp
- Vanilla pod 1 pc
- Almond drink 400 ml
- Sugar 2 tbsp
- Cornstarch 2 tbsp
Instructions
- 1. Preheat the oven to 180 degrees Celsius with top and bottom heat.
- 2. Thoroughly wash the small apples.
- 3. Remove the core from the apples.
- 4. Cut the lemon in half.
- 5. Squeeze the juice out of the lemon.
- 6. Take a bowl and add marzipan, chopped hazelnuts, one tablespoon of lemon juice, raisins, and apricot jam.
- 7. Mix the ingredients in the bowl until a uniform mass forms.
- 8. Fill the apples with the marzipan mixture.
- 9. Place a small piece of the filling on top of each apple like a lid.
- 10. Add one teaspoon of oil to a baking dish.
- 11. Grease the baking dish with the oil.
- 12. Place the filled apples into the baking dish.
- 13. Bake the apples in the oven for about 45 minutes.
- 14. Slice the vanilla pod lengthwise.
- 15. Scrape the vanilla seeds out of the pod with a knife.
- 16. Put almond drink, sugar, the vanilla seeds, and the empty pod into a pot.
- 17. Bring the mixture in the pot to a boil.
- 18. Let the mixture steep over medium heat for about 10 minutes.
- 19. Take a small bowl and add cornstarch and a little cold water.
- 20. Mix the cornstarch and water into a smooth paste.
- 21. Remove the vanilla pod from the pot.
- 22. Bring the liquid in the pot back to a boil.
- 23. Stir the starch-water paste into the boiling liquid.
- 24. Let the sauce simmer for about 2 minutes.
- 25. Remove the sauce from the heat when it is slightly creamy.
- 26. Carefully take the baked apples out of the oven.
- 27. Plate the apples.
- 28. Pour the vanilla sauce around the apples.
- 29. Serve the apples immediately.
