  1. 1. Preheat the oven to 180 degrees Celsius with top and bottom heat.
  2. 2. Thoroughly wash the small apples.
  3. 3. Remove the core from the apples.
  4. 4. Cut the lemon in half.
  5. 5. Squeeze the juice out of the lemon.
  6. 6. Take a bowl and add marzipan, chopped hazelnuts, one tablespoon of lemon juice, raisins, and apricot jam.
  7. 7. Mix the ingredients in the bowl until a uniform mass forms.
  8. 8. Fill the apples with the marzipan mixture.
  9. 9. Place a small piece of the filling on top of each apple like a lid.
  10. 10. Add one teaspoon of oil to a baking dish.
  11. 11. Grease the baking dish with the oil.
  12. 12. Place the filled apples into the baking dish.
  13. 13. Bake the apples in the oven for about 45 minutes.
  14. 14. Slice the vanilla pod lengthwise.
  15. 15. Scrape the vanilla seeds out of the pod with a knife.
  16. 16. Put almond drink, sugar, the vanilla seeds, and the empty pod into a pot.
  17. 17. Bring the mixture in the pot to a boil.
  18. 18. Let the mixture steep over medium heat for about 10 minutes.
  19. 19. Take a small bowl and add cornstarch and a little cold water.
  20. 20. Mix the cornstarch and water into a smooth paste.
  21. 21. Remove the vanilla pod from the pot.
  22. 22. Bring the liquid in the pot back to a boil.
  23. 23. Stir the starch-water paste into the boiling liquid.
  24. 24. Let the sauce simmer for about 2 minutes.
  25. 25. Remove the sauce from the heat when it is slightly creamy.
  26. 26. Carefully take the baked apples out of the oven.
  27. 27. Plate the apples.
  28. 28. Pour the vanilla sauce around the apples.
  29. 29. Serve the apples immediately.
