🍳 Vegan Spread with Cashew, Carrot and Ginger

Ingredients
- carrots 4 pcs.
- ginger, fresh 10 g
- onions, yellow 1 pc.
- oil 2 tbsp
- cashew nuts 2 tbsp
- vegetable broth 200 ml
- sugar pinch
- salt pinch
- chili, ground pinch
Instructions
- 1. Peel the carrots, trim the ends and slice them thinly. Peel the ginger and chop it finely. Halve the onion, peel it and dice it.
- 2. Heat the oil in a pot over medium heat and sauté the carrots, onion and ginger for about 3 minutes. Add the cashew nuts and vegetable broth and simmer until soft for approx. 15 minutes.
- 3. Then transfer everything to a tall container. Season with sugar, salt and chili and blend thoroughly. Fill the vegan spread into clean jars and store in the refrigerator or enjoy immediately. Enjoy your meal!
