🍰 Vegan Plum Dumplings

Ingredients
- potatoes, floury 800 g
- wheat flour, Type 405 400 g
- Vemondo vegan egg substitute 4 tbsp
- oat drink Barista 150 g
- sugar 3 tbsp
- salt pinch
- plums 350 g
- margarine, vegan 5 tbsp
- brown sugar 2 tbsp
- breadcrumbs 3 tbsp
Instructions
- 1. Peel the potatoes and wash them thoroughly.
- 2. Cut the potatoes into small cubes.
- 3. Place the potato pieces in a pot and cover them with enough water.
- 4. Bring the water to a boil.
- 5. Cook the potatoes for about 20 minutes until they are soft.
- 6. Drain the cooking water.
- 7. Let the potatoes steam dry in the pot.
- 8. Press the warm potatoes through a potato ricer.
- 9. Place the mashed potatoes in a large bowl.
- 10. Add flour, Vemondo egg replacer, Barista oat drink, sugar, and a pinch of salt.
- 11. Mix all ingredients to form a smooth dough.
- 12. Wash the plums thoroughly.
- 13. Halve the plums and remove the pits.
- 14. Take about two tablespoons of dumpling dough.
- 15. Flatten the dough slightly in your palm.
- 16. Place one plum half in the center of the dough.
- 17. Close the dough around the plum to form a dumpling.
- 18. Repeat this process with the remaining dough and plum halves.
- 19. Fill a pot with water and bring it to a boil.
- 20. Reduce the heat so that the water is only simmering gently.
- 21. Carefully place the plum dumplings into the hot water.
- 22. Cook the dumplings for about 10 minutes.
- 23. Remove the dumplings as soon as they float to the surface.
- 24. Melt margarine in a frying pan over low heat.
- 25. Add brown sugar and breadcrumbs to the melted margarine.
- 26. Fry the mixture slowly for about 5 minutes until it turns brown.
- 27. Take the cooked dumplings out of the pot.
- 28. Let them drain briefly.
- 29. Coat the dumplings with the brown margarine-sugar mixture.
- 30. Serve the dumplings warm.
