  1. 1. Drain the chickpeas. Catch the liquid in a container.
  2. 2. Take 100 milliliters of the chickpea liquid. Whip it stiff with cream of tartar for about five minutes.
  3. 3. Gently fold the powdered sugar into the whipped liquid.
  4. 4. Set aside about ten tablespoons of this mixture. You will need this later for the glaze.
  5. 5. Add ground almonds, flour, cinnamon, and vanilla sugar to the remaining mixture in the bowl.
  6. 6. Gently fold the ingredients together until a dough forms.
  7. 7. Place the dough in the refrigerator for about 30 minutes to rest.
  8. 8. Preheat the oven to 150 degrees Celsius. Use top and bottom heat.
  9. 9. Dust the work surface with flour. Roll out the dough to about half a centimeter thick.
  10. 10. Cut out stars from the dough. Place them on baking sheets lined with baking paper.
  11. 11. Brush the stars with the reserved glaze mixture.
  12. 12. Bake the cookies for about 20 minutes in the oven.
  13. 13. Remove the cinnamon stars. Let them cool completely on a wire rack.
  14. 14. Serve the finished cookies and enjoy them.
