🍰 Vegan Cinnamon Stars

Ingredients
- chickpeas from the can 200 g
- powdered sugar 150 g
- cream of tartar 1 tsp
- almonds, ground 200 g
- wheat flour, Type 405 50 g
- cinnamon 0.5 tsp
- vanilla sugar 1 tsp
Instructions
- 1. Drain the chickpeas. Catch the liquid in a container.
- 2. Take 100 milliliters of the chickpea liquid. Whip it stiff with cream of tartar for about five minutes.
- 3. Gently fold the powdered sugar into the whipped liquid.
- 4. Set aside about ten tablespoons of this mixture. You will need this later for the glaze.
- 5. Add ground almonds, flour, cinnamon, and vanilla sugar to the remaining mixture in the bowl.
- 6. Gently fold the ingredients together until a dough forms.
- 7. Place the dough in the refrigerator for about 30 minutes to rest.
- 8. Preheat the oven to 150 degrees Celsius. Use top and bottom heat.
- 9. Dust the work surface with flour. Roll out the dough to about half a centimeter thick.
- 10. Cut out stars from the dough. Place them on baking sheets lined with baking paper.
- 11. Brush the stars with the reserved glaze mixture.
- 12. Bake the cookies for about 20 minutes in the oven.
- 13. Remove the cinnamon stars. Let them cool completely on a wire rack.
- 14. Serve the finished cookies and enjoy them.
