🍰 Vegan Cinnamon Rolls

Ingredients
- Soy drink 300 ml
- Yeast, fresh 0.5 pc.
- Sugar 230 g
- margarine, vegan 150 g
- Salt pinch
- Wheat flour, Type 405 600 g
- Cinnamon 1 tsp.
- Lemons 1 pc.
- Powdered sugar 100 g
Instructions
- 1. Warm the soy drink in a pot for about 1 minute until it is lukewarm.
- 2. Crumble the yeast and dissolve it together with 1 tablespoon of sugar in the warm soy drink.
- 3. Let the mixture rest covered for about 10 minutes.
- 4. In a bowl, mix 190 g of sugar, 100 g of margarine, a pinch of salt, flour, and the yeast milk into a smooth dough.
- 5. Let the dough rise covered for about 1 hour until its volume has doubled.
- 6. Melt the remaining margarine in a pot.
- 7. Mix the melted margarine with 3 tablespoons of sugar and cinnamon.
- 8. Roll out the dough on a floured surface to about 1 cm thickness.
- 9. Spread the sugar-margarine mixture over the dough.
- 10. Roll the dough up lengthwise.
- 11. Cut the roll into slices about 5 cm thick.
- 12. Place the cinnamon rolls on a baking sheet lined with parchment paper.
- 13. Let the cinnamon rolls rise covered for another 30 minutes.
- 14. Preheat the oven to 180 °C (convection).
- 15. Bake the cinnamon rolls for about 20 minutes until golden brown.
- 16. Cut a lemon in half and squeeze out the juice.
- 17. In a bowl, mix powdered sugar with 2 tablespoons of lemon juice to create a thick glaze.
- 18. Remove the cinnamon rolls from the oven.
- 19. Brush the cinnamon rolls with the glaze.
- 20. Enjoy the cinnamon rolls best while still warm.
