  1. 1. Preheat the oven to 200 degrees Celsius with top and bottom heat.
  2. 2. Wash the plums thoroughly.
  3. 3. Cut the plums in half and remove the pits.
  4. 4. Cut the lime in half.
  5. 5. Squeeze the juice from the lime.
  6. 6. Heat sugar in a frying pan over medium heat.
  7. 7. Melt the sugar for about 2 minutes.
  8. 8. Add 45 grams of margarine as soon as the sugar has caramelized.
  9. 9. Add the lime juice.
  10. 10. Stir the mixture well.
  11. 11. Grease a tart pan with 1 teaspoon of margarine.
  12. 12. Pour the liquid caramel into the pan.
  13. 13. Spread the caramel evenly in the pan.
  14. 14. Place the plums in the pan with the rounded side facing down.
  15. 15. Unroll the puff pastry.
  16. 16. Dust a work surface with flour.
  17. 17. Roll the pastry into a loose circle on the floured surface.
  18. 18. Place the pastry over the plums.
  19. 19. Fold the pastry edges inward.
  20. 20. Tuck the pastry edges between the rim of the pan and the plums.
  21. 21. Prick the pastry several times with a fork.
  22. 22. Bake the tart in the oven for about 30 minutes.
  23. 23. Bake until the tart is golden brown.
  24. 24. Let the Tarte Tatin cool on a wire rack for about 5 minutes.
  25. 25. Invert the Tarte Tatin onto a plate.
  26. 26. Serve the Tarte Tatin warm.
