🍽️ Vegan Rustic Tart with Green Pesto and Colorful Cherry Tomatoes

Ingredients
- Vegan margarine 125 g
- Spelt flour, Type 630 250 g
- Sugar 1 tsp
- Salt pinch
- Water 5 tbsp
- Cherry tomato mix 350 g
- Chives, fresh 25 g
- Vegan Basilico Pesto 190 g
- Soy yogurt 5 tbsp
- Cornstarch 2 tbsp
- Pepper, black ground pinch
- Basil, fresh 20 g
Instructions
- 1. Preheat the oven to 200 degrees Celsius with top and bottom heat.
- 2. Mix cold margarine, flour, sugar, salt, and cold water in a bowl.
- 3. Knead the ingredients into a smooth dough using your hands.
- 4. Dust a work surface with flour and roll out the dough to about 2 millimeters thick.
- 5. Place the dough into a greased tart pan with a diameter of 28 centimeters.
- 6. Form a border about 3 centimeters high and press the dough firmly against the bottom and sides.
- 7. Straighten the edge with a knife and prick the bottom several times with a fork.
- 8. Bake the dough base for about 15 minutes until golden brown in the oven.
- 9. Wash the cherry tomatoes and halve them.
- 10. Wash the chives, shake them dry, and cut them into fine rings.
- 11. Whisk green pesto, soy yogurt, cornstarch, and chives together in a bowl.
- 12. Spread the pesto mixture evenly over the pre-baked dough.
- 13. Distribute the halved cherry tomatoes over the pesto layer.
- 14. Season the tart with sugar, salt, and pepper.
- 15. Bake the tart for about 25 minutes in the oven.
- 16. Wash the basil, shake it dry, and pluck the leaves from the stems.
- 17. Carefully remove the tart from the oven.
- 18. Garnish the tart with the fresh basil leaves and serve.
