🥗 Vegan Tacos with Fresh Green Goodness Salad

Ingredients
- Chinese cabbage 1 pc.
- Cucumbers 1 pc.
- Spring onions 3 pc.
- Baby spinach 100 g
- Cherry tomatoes 200 g
- Cilantro, fresh 25 g
- Garlic cloves 2 pc.
- Avocado 1 pc.
- Cashew nuts 40 g
- Avocado oil 5 tbsp
- Lemon juice 25 ml
- Salt pinch
- Vegan nuggets with sweet chili sauce 600 g
- Organic limes 1 pc.
- Corn from the can 200 g
- Chili flakes pinch
- Wraps 8 pc.
- Vegan shepherd's delight 150 g
Instructions
- 1. Wash the vegetables and herbs thoroughly and pat them dry.
- 2. Cut the Napa cabbage into very fine strips and place them in a large bowl.
- 3. Halve the cucumber and scrape out the seeds with a spoon.
- 4. Dice the deseeded cucumber finely and add it to the bowl.
- 5. Slice the spring onions into thin rings and add them to the bowl as well.
- 6. Peel the garlic cloves.
- 7. Halve the avocado, remove the pit, and scoop out the flesh.
- 8. Place the avocado, spinach, garlic cloves, and cashew nuts into a food processor.
- 9. Add the avocado oil and lemon juice.
- 10. Blend the mixture until it forms a creamy dressing.
- 11. Pour the dressing over the vegetables in the bowl.
- 12. Toss everything together thoroughly.
- 13. Season the salad with salt and pepper to taste.
- 14. Place the vegan nuggets on a baking sheet lined with baking paper.
- 15. Preheat the oven to 180 degrees Celsius with top and bottom heat.
- 16. Bake the nuggets in the center of the oven for about 15 minutes until golden brown.
- 17. Remove the nuggets from the oven.
- 18. Cut the nuggets into strips.
- 19. Halve the lime and squeeze out the juice.
- 20. Drain the corn and place it in a separate bowl.
- 21. Quarter the tomatoes.
- 22. Roughly chop the coriander.
- 23. Add the tomatoes and coriander to the bowl with the corn.
- 24. Add 1 tablespoon of avocado oil, the lime juice, salt, and a pinch of chili flakes.
- 25. Mix the ingredients for the corn salsa well together.
- 26. Place the wraps in round or rectangular baking dishes.
- 27. Bake the wraps in the oven for about 10 minutes until golden brown.
- 28. Remove the wraps from the oven and let them cool for a short moment.
- 29. Fill the wraps with the Green Goodness salad.
- 30. Distribute the nugget strips and the corn salsa on top.
- 31. Crumble the vegan feta cheese over the top.
- 32. Enjoy your meal!
