🍰 Vegan Streusel Rolls with Cherries

Ingredients
- Oat drink Barista 250 ml
- Yeast, fresh 0.5 pcs
- Sugar 120 g
- Margarine, vegan 150 g
- Salt Pinch
- Apple sauce 60 g
- Wheat flour, Type 405 550 g
- Sour cherries in a jar 200 g
- Almonds, ground 40 g
- Sour cherry jam 6 tbsp
Instructions
- 1. Warm up 250 milliliters of Barista oat drink in a pot for about 1 minute until it is lukewarm.
- 2. Crumble the yeast into the pot and dissolve it with 1 tablespoon of sugar.
- 3. Let the yeast mixture rise in the pot with a lid on for about 10 minutes.
- 4. Transfer the yeast mixture into a bowl.
- 5. Add 60 grams of sugar, 100 grams of margarine, a pinch of salt, apple puree, and 500 grams of flour.
- 6. Knead everything into a smooth dough.
- 7. Let the dough rise in the bowl for 1 hour.
- 8. Drain the cherries in a sieve and let them drip dry.
- 9. Mix the almonds with 50 grams of margarine, 50 grams of sugar, and 50 grams of flour in a bowl.
- 10. Knead the mixture into crumbles.
- 11. Preheat the oven to 180 degrees Celsius (convection).
- 12. Knead the yeast dough once more briefly.
- 13. Divide the dough into 8 equal balls.
- 14. Shape each ball into a long roll on a floured work surface.
- 15. Twist the rolls into snail shapes.
- 16. Place the snails on two baking sheets lined with baking paper.
- 17. Let the snails rise covered for 10 minutes.
- 18. Place 1 tablespoon of sour cherry jam in the center of each snail.
- 19. Distribute the drained cherries on top of the jam.
- 20. Generously sprinkle the prepared crumbles over the snails.
- 21. Bake the trays one after the other for about 20 minutes in the oven.
- 22. Let the vegan streusel rolls with cherries cool down.
- 23. Serve the snails and enjoy!
