🍽️ Creamy vegan spätzle with caramelized onions

Ingredients
- Salt pinch
- Wheat flour, Type 405 370 g
- Durum wheat semolina 60 g
- Cornstarch 75 g
- Oil 5 tbsp
- Turmeric, ground 1 tsp
- Soy drink 700 ml
- Onions, yellow 6 pcs.
- Chives, fresh 10 g
- Sugar 1 tsp
- Vemondo Grating Delight 300 g
- Pepper, black ground pinch
Instructions
- 1. Bring five liters of salted water to a boil in a large pot.
- 2. Mix flour, semolina, and cornstarch in a separate bowl.
- 3. Add one tablespoon of oil, one teaspoon of salt, half a teaspoon of turmeric, and 500 milliliters of soy drink to the flour mixture.
- 4. Stir the ingredients together until you have a smooth batter.
- 5. Peel the onions and slice them into very thin rings.
- 6. Wash the chives, shake them dry, and slice them into fine rings.
- 7. Heat two tablespoons of oil in a frying pan over medium heat.
- 8. Add the onion rings to the pan.
- 9. Sprinkle the onions with one teaspoon of sugar and a pinch of salt.
- 10. Simmer the onions for about 15 minutes.
- 11. Press the spätzle batter directly into the boiling water using a spätzle press.
- 12. Remove the spätzle with a slotted spoon as soon as they float to the surface.
- 13. Shock the spätzle in cold water.
- 14. Heat two tablespoons of oil and 200 milliliters of soy drink in a clean frying pan over medium heat.
- 15. Turn the heat down to low once the liquid is boiling.
- 16. Add the cooked spätzle to the pan.
- 17. Stir in the vegan grated cheese substitute until it has melted.
- 18. Season the spätzle to taste with salt and pepper.
- 19. Plate the spätzle.
- 20. Garnish the dish with the caramelized onions and chive rings.
- 21. Serve the meal and enjoy.
