🍰 Crunchy vegan oat cookies in Swedish style

Ingredients
- oats, fine 150 g
- wheat flour, Type 405 75 g
- sugar 150 g
- baking powder 1 tsp
- salt pinch
- margarine, vegan 150 g
- oat drink 20 ml
- vanilla sugar 1 tsp
Instructions
- 1. Preheat your oven to 175 degrees Celsius with top and bottom heat. If you are using fan-assisted (convection) mode, set the temperature to 155 degrees Celsius.
- 2. Take a large bowl and add the oat flakes, flour, sugar, baking powder, and a pinch of salt.
- 3. Mix the dry ingredients together with a spoon until they are evenly combined.
- 4. Take a small saucepan and melt the margarine over low heat.
- 5. Add the melted margarine, oat drink, and vanilla sugar to the bowl with the dry ingredients.
- 6. Process the mixture with a hand mixer using dough hooks until a uniform dough forms.
- 7. Line your baking trays with baking paper.
- 8. Take a teaspoon and form small balls from the dough.
- 9. Place the dough portions on the trays with a distance of about 10 centimeters between them.
- 10. Bake the cookies in the preheated oven for about 10 minutes.
- 11. Remove the cookies when they are golden brown.
- 12. Let the cookies cool down for a few minutes on the hot tray.
- 13. Store the cooled cookies in an airtight container to keep them fresh for several days.
