  1. 1. Preheat the oven to 200 degrees Celsius with top and bottom heat.
  2. 2. Clean the mushrooms if necessary with a kitchen towel and slice them thinly.
  3. 3. Peel the garlic and chop it finely.
  4. 4. Wash the parsley, shake it dry and remove the thick stems.
  5. 5. Also chop the parsley finely.
  6. 6. Heat two tablespoons of oil in a pot on high heat.
  7. 7. Fry the mushrooms in it for about five minutes until golden brown.
  8. 8. Add the garlic and oat drink to the sauce.
  9. 9. Let the sauce simmer on low to medium heat for about three minutes.
  10. 10. Place the vegan schnitzels on a baking sheet lined with baking paper in the meantime.
  11. 11. Bake the schnitzels in the oven for about ten minutes until golden brown.
  12. 12. Mix cornstarch with one to two tablespoons of water in a small bowl.
  13. 13. Stir the starch-water mixture into the boiling sauce while stirring.
  14. 14. Season the sauce with salt and pepper to taste.
  15. 15. Set the sauce aside covered until you are ready to serve the dish.
  16. 16. Plate the finished schnitzels.
  17. 17. Pour the mushroom sauce over the schnitzels.
  18. 18. Garnish the dish with the chopped parsley.
