🍰 Vegan Red Fruit Pudding with Vanilla Cream

Ingredients
- frozen berry mix 500 g
- cherries, fresh 750 g
- organic lemon 1 pc.
- cornstarch 4 tsp
- sugar 50 g
- cinnamon pinch
- mint, fresh 10 g
- soy yogurt 150 g
- vanilla sugar 2 tbsp
Instructions
- 1. Let the berries thaw slightly. Place the cherries in a sieve and catch the juice. Wash one lemon, grate about 1 tsp of zest finely, halve it, and squeeze out the juice. In a bowl, stir the starch smooth with 4 tbsp of cherry juice.
- 2. In a pot, bring 400 ml of the caught cherry juice with sugar to a boil. Add the mixed starch and stir well. Simmer over medium heat for about 5 minutes until the liquid thickens slightly.
- 3. Add the thawed berries, cherries, lemon zest, and cinnamon to the pot, turn off the heat, and let everything steep in the residual heat for about 10 minutes.
- 4. Wash the mint, shake off the water, and pluck the leaves from the stems. In a bowl, mix the soy yogurt with vanilla sugar and 1 tsp of lemon juice, and adjust to taste.
- 5. Distribute the red fruit compote onto plates and garnish with the vanilla cream and fresh mint before serving. Enjoy your meal! Tip: Instead of frozen fruit, you can also use fresh fruit.
