🍽️ Crispy Vegan Potato Rösti with Creamy Mushrooms

Ingredients
- onions, yellow 1 pc.
- mushrooms, white 500 g
- parsley, fresh 10 g
- oil 6 tbsp
- vegetable broth 200 ml
- oat drink 500 ml
- potatoes, mostly waxy 1 kg
- wheat flour, Type 405 4 tbsp
- rose paprika 2 tsp
- salt pinch
- cornstarch 2 tbsp
- pepper, black ground pinch
Instructions
- 1. Cut the onion in half and remove the skin. Dice the onion flesh into fine cubes.
- 2. Clean the mushrooms with a kitchen towel if necessary. Cut them into quarters or small pieces depending on their size.
- 3. Wash the parsley and shake it dry. Pluck the leaves from the stems and chop them finely.
- 4. Heat two tablespoons of oil in a pot over high heat.
- 5. Sauté the mushrooms in the oil for about five minutes.
- 6. Add the diced onion and sauté it for another two minutes.
- 7. Deglaze the pan with vegetable broth and oat drink.
- 8. Reduce the heat and let the sauce simmer gently.
- 9. Wash the potatoes and place them in a pot with water.
- 10. Bring the water to a boil and cook the potatoes for ten minutes.
- 11. Drain the potatoes and rinse them briefly with cold water.
- 12. Let the potatoes cool slightly and then peel them.
- 13. Grate the peeled potatoes into a bowl.
- 14. Mix the grated potatoes with flour and paprika.
- 15. Season the potato mixture with salt.
- 16. Preheat the oven to 80 degrees Celsius with fan (convection).
- 17. Heat one tablespoon of oil in a pan over medium to high heat.
- 18. Add half of the potato mixture to the hot pan.
- 19. Fry the rösti for about ten minutes.
- 20. Carefully flip the rösti halfway through the frying time.
- 21. Fry the other side for another ten minutes until golden brown.
- 22. Repeat the process with the remaining potato mixture.
- 23. Keep the finished rösti warm in the preheated oven.
- 24. Dissolve cornstarch in a small amount of water in a bowl.
- 25. Stir the starch into the mushroom sauce to thicken it.
- 26. Season the sauce finally with salt and pepper.
- 27. Carefully remove the rösti from the oven.
- 28. Place the rösti on plates and top with the mushroom sauce.
- 29. Sprinkle the dish with the chopped parsley.
- 30. Enjoy!
