  1. 1. Cut the onion in half and remove the skin. Dice the onion flesh into fine cubes.
  2. 2. Clean the mushrooms with a kitchen towel if necessary. Cut them into quarters or small pieces depending on their size.
  3. 3. Wash the parsley and shake it dry. Pluck the leaves from the stems and chop them finely.
  4. 4. Heat two tablespoons of oil in a pot over high heat.
  5. 5. Sauté the mushrooms in the oil for about five minutes.
  6. 6. Add the diced onion and sauté it for another two minutes.
  7. 7. Deglaze the pan with vegetable broth and oat drink.
  8. 8. Reduce the heat and let the sauce simmer gently.
  9. 9. Wash the potatoes and place them in a pot with water.
  10. 10. Bring the water to a boil and cook the potatoes for ten minutes.
  11. 11. Drain the potatoes and rinse them briefly with cold water.
  12. 12. Let the potatoes cool slightly and then peel them.
  13. 13. Grate the peeled potatoes into a bowl.
  14. 14. Mix the grated potatoes with flour and paprika.
  15. 15. Season the potato mixture with salt.
  16. 16. Preheat the oven to 80 degrees Celsius with fan (convection).
  17. 17. Heat one tablespoon of oil in a pan over medium to high heat.
  18. 18. Add half of the potato mixture to the hot pan.
  19. 19. Fry the rösti for about ten minutes.
  20. 20. Carefully flip the rösti halfway through the frying time.
  21. 21. Fry the other side for another ten minutes until golden brown.
  22. 22. Repeat the process with the remaining potato mixture.
  23. 23. Keep the finished rösti warm in the preheated oven.
  24. 24. Dissolve cornstarch in a small amount of water in a bowl.
  25. 25. Stir the starch into the mushroom sauce to thicken it.
  26. 26. Season the sauce finally with salt and pepper.
  27. 27. Carefully remove the rösti from the oven.
  28. 28. Place the rösti on plates and top with the mushroom sauce.
  29. 29. Sprinkle the dish with the chopped parsley.
