  1. 1. Squeeze the juice of half a lime into a small bowl.
  2. 2. Cut the avocados open and remove the pits.
  3. 3. Scoop the avocado flesh out of the skin with a spoon.
  4. 4. Place the avocado in a bowl and add two tablespoons of lime juice.
  5. 5. Mash the avocado roughly with a fork.
  6. 6. Season the guacamole with salt and pepper to taste.
  7. 7. Keep the guacamole cool until you are ready to serve it.
  8. 8. Wash the spring onions thoroughly and pat them dry.
  9. 9. Trim the hard ends off the spring onions.
  10. 10. Slice the spring onions into thin rings.
  11. 11. Wash the bell pepper and cut it in half.
  12. 12. Remove the stem and seeds from the bell pepper.
  13. 13. Dice the bell pepper into small cubes.
  14. 14. Peel the carrots and trim the ends.
  15. 15. Grate the carrots coarsely.
  16. 16. Wash the coriander and pat it dry.
  17. 17. Chop the coriander finely.
  18. 18. Add all the prepared vegetables and herbs to a large bowl.
  19. 19. Add vegan cheese and sunflower oil to the bowl.
  20. 20. Mix all ingredients together thoroughly.
  21. 21. Heat a non-stick pan without fat over medium heat.
  22. 22. Place one wrap into the hot pan.
  23. 23. Spread about four tablespoons of the vegetable mixture onto the wrap.
  24. 24. Place a second wrap directly on top of the filling.
  25. 25. Fry the quesadilla for about two minutes until the cheese melts.
  26. 26. Carefully flip the quesadilla over.
  27. 27. Fry the other side for another two minutes.
  28. 28. Place the finished quesadilla on a plate.
  29. 29. Repeat the process with the remaining wraps and filling.
  30. 30. Let the quesadillas cool down for a short moment.
  31. 31. Cut the quesadillas into pieces.
  32. 32. Serve the quesadillas together with the guacamole.
