🍽️ Vegan Quesadillas with Fresh Guacamole

Ingredients
- Lime 1 pc.
- Avocado 2 pc.
- Salt pinch
- Pepper, black ground pinch
- Spring onions 0.5 pc.
- Pepper, yellow 2 pc.
- Carrots 2 pc.
- Cilantro, fresh 10 g
- Vemondo Grating Delight 150 g
- Sunflower oil 2 tbsp
- Wraps, whole grain 8 pc.
Instructions
- 1. Squeeze the juice of half a lime into a small bowl.
- 2. Cut the avocados open and remove the pits.
- 3. Scoop the avocado flesh out of the skin with a spoon.
- 4. Place the avocado in a bowl and add two tablespoons of lime juice.
- 5. Mash the avocado roughly with a fork.
- 6. Season the guacamole with salt and pepper to taste.
- 7. Keep the guacamole cool until you are ready to serve it.
- 8. Wash the spring onions thoroughly and pat them dry.
- 9. Trim the hard ends off the spring onions.
- 10. Slice the spring onions into thin rings.
- 11. Wash the bell pepper and cut it in half.
- 12. Remove the stem and seeds from the bell pepper.
- 13. Dice the bell pepper into small cubes.
- 14. Peel the carrots and trim the ends.
- 15. Grate the carrots coarsely.
- 16. Wash the coriander and pat it dry.
- 17. Chop the coriander finely.
- 18. Add all the prepared vegetables and herbs to a large bowl.
- 19. Add vegan cheese and sunflower oil to the bowl.
- 20. Mix all ingredients together thoroughly.
- 21. Heat a non-stick pan without fat over medium heat.
- 22. Place one wrap into the hot pan.
- 23. Spread about four tablespoons of the vegetable mixture onto the wrap.
- 24. Place a second wrap directly on top of the filling.
- 25. Fry the quesadilla for about two minutes until the cheese melts.
- 26. Carefully flip the quesadilla over.
- 27. Fry the other side for another two minutes.
- 28. Place the finished quesadilla on a plate.
- 29. Repeat the process with the remaining wraps and filling.
- 30. Let the quesadillas cool down for a short moment.
- 31. Cut the quesadillas into pieces.
- 32. Serve the quesadillas together with the guacamole.
