🍲 Vegan Pizza Party Soup

Ingredients
- garlic cloves 2 pcs
- pepper, red 1 pcs
- mushrooms, brown 150 g
- corn from the can 100 g
- Vemondo vegan mince 275 g
- oil 2 tbsp
- tomatoes, chopped 800 g
- vegetable broth 600 ml
- oat drink 200 ml
- salt pinch
- pepper, black ground pinch
- oregano, dried 1 tbsp
- basil, fresh 10 g
- Vemondo grating delight 8 tbsp
Instructions
- 1. Peel the garlic and chop it finely.
- 2. Wash the bell pepper, remove the seeds, and dice it into small pieces.
- 3. Clean the mushrooms with a kitchen towel and slice them.
- 4. Drain the corn in a sieve.
- 5. Loosen the vegan mince in the packaging slightly with a fork.
- 6. Heat oil in a pot on high heat.
- 7. Fry the vegan mince for about 10 minutes until crumbly.
- 8. Add the garlic, bell pepper, mushrooms, and corn to the pot.
- 9. Stir everything and let it sweat for about 3 minutes.
- 10. Add the chopped tomatoes, vegetable broth, and oat drink.
- 11. Stir the mixture and close the lid.
- 12. Bring the soup to a boil.
- 13. Reduce the heat to the lowest setting.
- 14. Let the soup simmer for about 10 minutes.
- 15. Season the soup with salt, pepper, and oregano.
- 16. Wash the basil and shake it dry.
- 17. Chop the basil roughly.
- 18. Divide the soup among deep plates.
- 19. Garnish each plate with 2 tablespoons of grated cheese and the basil.
- 20. Serve the soup and enjoy your meal.
