🍳 Vegan Peach Pancakes

Ingredients
- peach from can 450 g
- wheat flour, Type 405 200 g
- sugar 4 tbsp
- baking powder 2 tsp
- salt pinch
- oil 3 tbsp
- sparkling water 100 ml
- soy drink 100 ml
- soy yogurt 150 g
- powdered sugar 1 tbsp
Instructions
- 1. Drain the peaches.
- 2. Mix flour, sugar, baking powder, and salt in a bowl.
- 3. Add 1 tbsp oil, mineral water, and soy drink.
- 4. Stir everything into a smooth batter.
- 5. Preheat the oven to 100 °C (top/bottom heat).
- 6. Heat a pan with 1 tbsp oil over medium heat.
- 7. Pour one ladle of batter into the pan.
- 8. Distribute the batter by tilting the pan slightly.
- 9. Bake the pancakes for about 1–2 minutes per side until golden brown.
- 10. Keep the finished pancakes warm in the oven.
- 11. Arrange the pancakes on a serving plate.
- 12. Spread each pancake with 2 tbsp soy yogurt.
- 13. Place a peach half in the center of each pancake.
- 14. Dust the pancakes with a little powdered sugar.
- 15. Serve the pancakes and enjoy!
