  1. 1. Place the blueberries in a bowl and let them thaw slightly. In another bowl, mix flour, sugar, baking powder, and salt. Then add 1 tbsp oil, sparkling water, and soy milk, and stir until smooth.
  2. 2. Preheat the oven to 100 °C. Heat a pan with 2 tbsp oil over medium heat and pour in a ladle of batter for each pancake. Add 1 tbsp blueberries to each pancake and cook for about 1–2 minutes on each side until golden brown. Keep the finished pancakes warm in the oven.
  3. 3. Arrange the pancakes on plates and serve. Enjoy your meal! Tip: Serve the pancakes with soy yogurt, jam, or maple syrup for an even better taste.
