🍳 Vegan Pancakes with Blueberries

Ingredients
- blueberries, frozen 200 g
- wheat flour, Type 405 200 g
- sugar 2 tbsp
- baking powder 2 tsp
- salt pinch
- oil 3 tbsp
- sparkling water 100 ml
- soy drink 100 ml
Instructions
- 1. Place the blueberries in a bowl and let them thaw slightly. In another bowl, mix flour, sugar, baking powder, and salt. Then add 1 tbsp oil, sparkling water, and soy milk, and stir until smooth.
- 2. Preheat the oven to 100 °C. Heat a pan with 2 tbsp oil over medium heat and pour in a ladle of batter for each pancake. Add 1 tbsp blueberries to each pancake and cook for about 1–2 minutes on each side until golden brown. Keep the finished pancakes warm in the oven.
- 3. Arrange the pancakes on plates and serve.
