  2. 2. Line a baking tray with baking paper.
  3. 3. Arrange the vegan nuggets on the tray.
  4. 4. Put the tray in the oven and bake the nuggets for about 15 minutes.
  5. 5. Take the nuggets out when they are golden brown and crispy.
  6. 6. Fill a pot with water and add some salt.
  7. 7. Bring the water to a boil.
  8. 8. Add the peas to the boiling water.
  9. 9. Cook the peas for about 3 minutes.
  10. 10. Drain the peas in a colander.
  11. 11. Rinse the peas briefly with cold water.
  12. 12. Cut a lemon in half.
  13. 13. Squeeze the juice from the lemon.
  14. 14. Wash the mint leaves under running water.
  15. 15. Dry the mint thoroughly.
  16. 16. Place the drained peas in a tall container.
  17. 17. Add 2 tablespoons of lemon juice.
  18. 18. Add soy yogurt.
  19. 19. Season the mixture with salt and pepper.
  20. 20. Add the mint leaves.
  21. 21. Blend all ingredients thoroughly until smooth.
