  1. 1. Drain the chickpeas and catch the liquid in a container. Use the chickpeas for another dish. Squeeze the juice from a halved lemon.
  2. 2. Add 6 tablespoons of chickpea water (aquafaba), 2 tablespoons of lemon juice, 1 teaspoon of mustard, and a pinch of salt into a tall container.
  3. 3. Blend the ingredients briefly with a hand blender until they are mixed.
  4. 4. Pour oil into the mixture in a very thin stream while continuously stirring or blending.
  5. 5. Continue mixing until the mayo is creamy and thick.
  6. 6. Season the vegan mayonnaise to taste and serve it.
