  1. 1. Wash the lemon and cut it in half.
  2. 2. Squeeze the juice from the lemon into a small bowl.
  3. 3. Pour the soy drink into a tall, narrow container.
  4. 4. Add one tablespoon of lemon juice and the mustard to the container.
  5. 5. Blend the ingredients with a hand blender until well mixed.
  6. 6. Pour the oil slowly in a thin stream into the mixture.
  7. 7. Stir or blend continuously until the mayonnaise becomes thick and creamy.
  8. 8. Season the mayonnaise with salt and pepper to taste.
  9. 9. Add a little more lemon juice if desired.
  10. 10. Serve the vegan mayonnaise and enjoy.
