🍳 Vegan Maultaschen Sandwiches with Caramelized Onions and Herb Mayo

Ingredients
- onions, red 4 pcs.
- oil 260 ml
- sugar 4 tbsp
- balsamic vinegar, dark 2 tbsp
- garlic cloves 1 pcs.
- wild garlic 25 g
- lemons 0.5 pcs.
- soy drink 100 ml
- mustard 1 tsp
- salt pinch
- vegan maultaschen 8 pcs.
- rustic bread 8 slices
- corn salad 20 g
Instructions
- 1. Halve the onions and peel them.
- 2. Cut the onions into thin strips.
- 3. Heat 2 tablespoons of oil in a pan over high heat.
- 4. Add the onion strips to the hot pan.
- 5. Fry the onions for about 3 minutes.
- 6. Add 3 tablespoons of sugar and balsamic vinegar to the onions.
- 7. Reduce the heat to medium.
- 8. Caramelize the onions for about 10 minutes.
- 9. Stir the onions occasionally.
- 10. Remove the caramelized onions from the pan.
- 11. Place the onions on a plate and set aside.
- 12. Peel the garlic.
- 13. Roughly chop the garlic.
- 14. Wash the wild garlic.
- 15. Shake the wild garlic dry.
- 16. Roughly chop the wild garlic.
- 17. Halve the lemon.
- 18. Squeeze the juice from one half of the lemon.
- 19. Add soy drink, 1 tablespoon of lemon juice, mustard, garlic, and wild garlic to a tall container.
- 20. Blend the ingredients in the container.
- 21. Pour 200 milliliters of oil into the mixture in a very thin stream while mixing continuously.
- 22. Continue mixing until the mayo is creamy.
- 23. Season the mayo with salt and sugar.
- 24. Slice the Maultaschen (filled pasta pockets) into slices.
- 25. Heat another 2 tablespoons of oil in the pan over high heat.
- 26. Fry the Maultaschen slices on all sides for about 3 minutes until golden brown.
- 27. Remove the fried Maultaschen from the pan.
- 28. Place the Maultaschen on a plate and set aside.
- 29. Spread the wild garlic mayo thinly onto the peasant bread slices.
- 30. Toast the bread slices in the pan on both sides until golden brown.
- 31. Wash the lamb's lettuce.
- 32. Spin the lamb's lettuce dry.
- 33. Top one toasted bread slice with wild garlic mayo.
- 34. Place lamb's lettuce on top.
- 35. Place the fried Maultaschen slices on top.
- 36. Spread the caramelized onions on top.
- 37. Cover the sandwich with another toasted bread slice.
- 38. Halve the sandwiches.
- 39. Serve the sandwiches.
