🍰 Crunchy Vegan Macadamia Cookies

Ingredients
- Macadamia nuts, roasted and salted 200 g
- margarine, vegan 120 g
- Vanilla sugar 1 packet
- Brown sugar 100 g
- Apple juice 75 ml
- Wheat flour, Type 405 200 g
- Baking powder 0.5 tsp
- Salt pinch
Instructions
- 1. Preheat the oven to 180 degrees Celsius with top and bottom heat.
- 2. Roughly chop the macadamia nuts.
- 3. Put margarine, vanilla sugar, and cane sugar into a bowl.
- 4. Beat the mixture with a mixer until fluffy and the sugar has dissolved.
- 5. Add the apple juice gradually.
- 6. Stir everything until creamy.
- 7. Sift flour, baking powder, and salt into the bowl gradually.
- 8. Stir the dough until smooth.
- 9. Fold the chopped macadamia nuts into the dough.
- 10. Take one tablespoon of dough at a time.
- 11. Place the dough portions in dollops onto a baking sheet lined with baking paper.
- 12. Make sure there is enough space between the cookies.
- 13. Smooth the cookies with the back of the spoon.
- 14. Bake the cookies for about 13 minutes until crunchy.
- 15. Let the cookies cool down slightly.
- 16. Serve the cookies and enjoy them.
