🍳 Vegan Lunchbox for Kids

Ingredients
- Courgettes 1 pc.
- Peppers, red 1 pc.
- Vegan spread - Papaya-Mango-Curry 180 g
- Buns 1 pc.
- Multigrain bread 4 slices
- Vegan snack slices 4 slices
- Mini Carrots 10 pc.
- Cherry tomatoes 100 g
- Grapes, light 100 g
- Grapes, dark 100 g
Instructions
- 1. Wash the cucumber thoroughly.
- 2. Dice half of the cucumber into small cubes.
- 3. Wash the bell pepper.
- 4. Cut the bell pepper in half.
- 5. Remove the tough stem and seeds from the bell pepper.
- 6. Dice the bell pepper into small cubes as well.
- 7. Place the diced cucumber and bell pepper into a bowl.
- 8. Add 3 tablespoons of vegan papaya-mango-curry spread.
- 9. Mix everything together thoroughly.
- 10. Slice the rolls in half.
- 11. Hollow out the roll halves using a spoon.
- 12. Fill the hollowed-out rolls with the spread.
- 13. Spread the vegan spread thinly onto the bread slices.
- 14. Place 4 slices of Genießerscheiben (a type of vegan deli slice) onto the bread.
- 15. Place the remaining bread slices on top as a lid.
- 16. Cut the sandwiches in half.
- 17. Optionally shape the bread into fun forms using cookie cutters.
- 18. Cut the remaining part of the cucumber into sticks.
- 19. Peel the mini carrots.
- 20. Cut the carrots in half lengthwise if necessary.
- 21. Wash the cherry tomatoes and the grapes.
- 22. Drain the fruit and vegetables well.
- 23. Place the cucumber sticks and carrots into the lunchbox.
- 24. Add the cherry tomatoes and grapes to the lunchbox.
- 25. Place the filled baguettes and the sandwiches into the box.
- 26. Enjoy your meal!
