🍰 Vegan Linzer Cookies

Ingredients
- spreadable fat 125 g
- sugar 80 g
- wheat flour, type 405 100 g
- baking powder 1 tsp
- walnuts, ground 150 g
- salt pinch
- cinnamon 0.25 tsp
- raspberry jam 100 g
- powdered sugar 1 tbsp
Instructions
- 1. Preheat the oven to 180 degrees Celsius with fan.
- 2. Mix margarine, sugar, flour, baking powder, walnuts, salt, and cinnamon in a bowl.
- 3. Knead the ingredients into a uniform dough.
- 4. Let the dough rest in the refrigerator for about 1 hour.
- 5. Roll out the dough on a lightly floured surface to a thickness of about 3 mm.
- 6. Cut out 5 cm circles from the dough.
- 7. Take half of the cookies and cut out the center with a small star-shaped cutter.
- 8. Place all cookies on a baking sheet lined with baking paper.
- 9. Bake the cookies one after the other for about 10–12 minutes until they are crispy.
- 10. Spread jam on the still lukewarm cookies.
- 11. Place a star-shaped cookie on top of each jam-covered cookie.
- 12. Let the cookies cool completely.
- 13. Dust the finished Linzer cookies with powdered sugar.
- 14. Serve the cookies and enjoy.
