🍲 Creamy Leek Soup with Oat Drink

Ingredients
- Leek 2 pcs.
- Onions, yellow 2 pcs.
- Lemons 1 pcs.
- Oil 2 tbsp.
- Vemondo vegan mince 275 g
- Oat drink Barista 250 ml
- Vemondo grating delight 150 g
- Turmeric, ground 0.5 tsp.
- Vegetable broth 800 ml
- Vegan fresh spread, plain 150 g
- Salt pinch
- Pepper, black ground pinch
Instructions
- 1. Cut the leek in half lengthwise and remove the hard root end.
- 2. Cut the leek into approx. 1 cm pieces and wash them thoroughly.
- 3. Halve the onions, peel them and dice them finely.
- 4. Rinse the lemon under hot water and grate approx. 1 teaspoon of fine zest.
- 5. Halve the lemon and squeeze out the juice.
- 6. Heat oil in a pot over medium heat.
- 7. Fry the onions for approx. 2 minutes.
- 8. Add the plant-based mince and the leek.
- 9. Continue to fry the mixture while stirring for approx. 5 minutes.
- 10. Pour in the oat drink (Barista edition), the plant-based grated cheese, turmeric, lemon zest and vegetable broth.
- 11. Let the soup simmer on low heat for approx. 15 minutes.
- 12. Stir the plant-based spread (plain) into the soup.
- 13. Finally, season the soup to taste with salt, pepper and lemon juice.
- 14. Serve the soup on plates and enjoy your meal!
