  1. 1. Cut the leek in half lengthwise and remove the hard root end.
  2. 2. Cut the leek into approx. 1 cm pieces and wash them thoroughly.
  3. 3. Halve the onions, peel them and dice them finely.
  4. 4. Rinse the lemon under hot water and grate approx. 1 teaspoon of fine zest.
  5. 5. Halve the lemon and squeeze out the juice.
  6. 6. Heat oil in a pot over medium heat.
  7. 7. Fry the onions for approx. 2 minutes.
  8. 8. Add the plant-based mince and the leek.
  9. 9. Continue to fry the mixture while stirring for approx. 5 minutes.
  10. 10. Pour in the oat drink (Barista edition), the plant-based grated cheese, turmeric, lemon zest and vegetable broth.
  11. 11. Let the soup simmer on low heat for approx. 15 minutes.
  12. 12. Stir the plant-based spread (plain) into the soup.
  13. 13. Finally, season the soup to taste with salt, pepper and lemon juice.
  14. 14. Serve the soup on plates and enjoy your meal!
