🍝 Vegan Lasagna with Spinach

Ingredients
- Cashew nuts 200 g
- Onions, yellow 1 pc.
- Garlic cloves 1 pc.
- Basil, fresh 20 g
- Lemons 1 pc.
- Dry white wine 200 ml
- Oil 2 tbsp
- Leaf spinach, frozen 500 g
- Soy drink 800 ml
- Salt pinch
- Pepper, black ground pinch
- Nutmeg, ground pinch
- Lasagna sheets 500 g
Instructions
- 1. Preheat the oven to 180 degrees Celsius with top and bottom heat.
- 2. Put two-thirds of the cashew nuts into a bowl.
- 3. Pour hot water over the cashew nuts.
- 4. Let the cashew nuts soak in the water for about 10 minutes.
- 5. Roughly chop the remaining cashew nuts.
- 6. Halve the onion and peel it.
- 7. Dice the onion finely.
- 8. Peel the garlic clove.
- 9. Finely chop the garlic.
- 10. Wash the basil.
- 11. Shake the basil dry.
- 12. Remove the thick stems from the basil.
- 13. Halve the lemon.
- 14. Squeeze the juice from the lemon.
- 15. Drain the soaking water from the cashew nuts.
- 16. Return the soaked cashew nuts to the bowl.
- 17. Add the basil to the bowl.
- 18. Add two tablespoons of lemon juice to the bowl.
- 19. Add white wine to the bowl.
- 20. Blend the mixture in the bowl until smooth.
- 21. Heat two tablespoons of oil in a pot over medium heat.
- 22. Add the diced onion to the pot.
- 23. Add the chopped garlic to the pot.
- 24. Sauté the onion and garlic until translucent for about 2 minutes.
- 25. Add the pureed cashew nuts to the onion mixture.
- 26. Add soy drink to the mixture.
- 27. Bring the sauce to a boil.
- 28. Add the spinach to the hot sauce.
- 29. Let the spinach thaw in the sauce.
- 30. Season the sauce with salt.
- 31. Season the sauce with pepper.
- 32. Season the sauce with nutmeg.
- 33. Spread a thin layer of the spinach sauce on the bottom of a baking dish.
- 34. Place lasagna sheets on the sauce.
- 35. Repeat the layering process until all ingredients are used up.
- 36. Ensure that the lasagna sheets are completely covered with liquid.
- 37. Spread the chopped cashew nuts over the lasagna.
- 38. Bake the lasagna in the oven for about 30 minutes.
- 39. Remove the lasagna from the oven.
- 40. Let the lasagna cool down briefly.
- 41. Serve the lasagna.
