  1. 1. Halve the onion and remove the skin.
  2. 2. Cut the onion into small cubes.
  3. 3. Cut the smoked tofu into cubes.
  4. 4. Wash the chives and shake them dry.
  5. 5. Cut the chives into fine rings.
  6. 6. Heat 3 tablespoons of oil in a pan on high heat.
  7. 7. Fry the onions and smoked tofu for approx. 3 minutes.
  8. 8. Drain the sauerkraut into a sieve.
  9. 9. Squeeze the sauerkraut dry.
  10. 10. Add the sauerkraut to the tofu in the pan.
  11. 11. Reduce the heat to medium.
  12. 12. Fry the mixture, stirring occasionally, for approx. 10 minutes.
  13. 13. Heat 3 tablespoons of oil in a second pan on medium heat.
  14. 14. Fry the Schupfnudeln (German potato dumplings) for approx. 5 minutes until golden brown and crispy.
  15. 15. Shake the pan occasionally so the dumplings cook evenly.
  16. 16. Add the fried sauerkraut to the Schupfnudeln.
  17. 17. Deglaze the pan with apple juice.
  18. 18. Let the mixture come to a brief boil.
  19. 19. Season the sauerkraut Schupfnudeln with salt and pepper.
  20. 20. Divide the sauerkraut Schupfnudeln onto plates.
  21. 21. Sprinkle the dish with the chive rings.
  22. 22. Serve the food immediately.
