🍽️ Vegan Sauerkraut Schupfnudeln with Smoked Tofu

Ingredients
- onions, yellow 1 pc.
- smoked tofu 150 g
- chives, fresh 3 g
- oil 6 tbsp
- sauerkraut 500 g
- Vemondo vegan Schupfnudeln 800 g
- apple juice, unfiltered 100 ml
- salt pinch
- pepper, black ground pinch
Instructions
- 1. Halve the onion and remove the skin.
- 2. Cut the onion into small cubes.
- 3. Cut the smoked tofu into cubes.
- 4. Wash the chives and shake them dry.
- 5. Cut the chives into fine rings.
- 6. Heat 3 tablespoons of oil in a pan on high heat.
- 7. Fry the onions and smoked tofu for approx. 3 minutes.
- 8. Drain the sauerkraut into a sieve.
- 9. Squeeze the sauerkraut dry.
- 10. Add the sauerkraut to the tofu in the pan.
- 11. Reduce the heat to medium.
- 12. Fry the mixture, stirring occasionally, for approx. 10 minutes.
- 13. Heat 3 tablespoons of oil in a second pan on medium heat.
- 14. Fry the Schupfnudeln (German potato dumplings) for approx. 5 minutes until golden brown and crispy.
- 15. Shake the pan occasionally so the dumplings cook evenly.
- 16. Add the fried sauerkraut to the Schupfnudeln.
- 17. Deglaze the pan with apple juice.
- 18. Let the mixture come to a brief boil.
- 19. Season the sauerkraut Schupfnudeln with salt and pepper.
- 20. Divide the sauerkraut Schupfnudeln onto plates.
- 21. Sprinkle the dish with the chive rings.
- 22. Serve the food immediately.
