🍰 Vegan Coconut Macaroons

Ingredients
- chickpeas from the can 200 g
- powdered sugar 150 g
- cream of tartar 1 tsp
- shredded coconut 200 g
- coating chocolate, dark 100 g
Instructions
- 1. Preheat the oven to 170 °C (top/bottom heat). Drain the chickpeas in a sieve and collect the liquid. In a bowl, whip 200 ml of the chickpea liquid with cream of tartar until stiff for about 5 minutes.
- 2. Gently fold in the powdered sugar and shredded coconut. Place small portions on a baking sheet lined with parchment paper using two spoons and bake for approx. 30 minutes in the oven. Remove from the oven after baking and let cool.
- 3. Bring about 500 ml of water to a boil in a pot. Roughly chop the chocolate. Melt the chocolate in a bowl over a water bath. Decorate the vegan coconut macaroons with the melted chocolate, let them cool and serve. Enjoy!
