🍽️ Vegan Cheese Pressed Dumplings with Apple Sauerkraut

Ingredients
- Day-old rolls 8 pcs.
- Red onions 2 pcs.
- Vegan margarine 6 tbsp.
- Barista oat drink 500 ml
- Cornstarch 4 tbsp.
- Vemondo Grated Cheese 150 g
- Ground nutmeg 1 tsp.
- Salt pinch
- Ground black pepper pinch
- Breadcrumbs 4 tbsp.
- Red apples 4 pcs.
- Oil 1 tbsp.
- Sauerkraut 810 g
Instructions
- 1. Cut the bread rolls into coarse cubes and place them side by side in a shallow dish.
- 2. Halve the onions, peel them, and dice them finely.
- 3. Heat 2 tablespoons of margarine in a pot over medium heat.
- 4. Sauté the onions for about 2 minutes.
- 5. Deglaze the onions with Barista oat drink and heat the mixture.
- 6. Pour the oat drink mixture over the bread cubes until they are just soaked.
- 7. Let the bread cool and absorb the liquid.
- 8. Squeeze the bread rolls slightly and place them in a bowl.
- 9. Add cornstarch, the sautéed onions, Reibegenuss (a vegan cheese alternative), nutmeg, salt, and pepper.
- 10. Mix all ingredients thoroughly.
- 11. If the mixture is too soft, add breadcrumbs spoonful by spoonful.
- 12. With damp hands, shape 8 to 10 dumplings from the mixture.
- 13. Bring about 5 liters of salted water to a boil in a pot with a lid.
- 14. Let the dumplings cook in the boiling water for about 20 minutes with the lid on, using low heat.
- 15. Remove the dumplings from the water with a slotted spoon and let them drain.
- 16. Melt 4 tablespoons of margarine in a frying pan over medium heat.
- 17. Add 2 tablespoons of breadcrumbs and let them slowly turn brown over low heat for about 8 minutes.
- 18. Peel the apples, quarter them, and remove the core.
- 19. Dice the apples finely.
- 20. Heat 1 tablespoon of oil in a pot.
- 21. Sauté the apple cubes for about 2 to 3 minutes.
- 22. Add the sauerkraut and let it simmer gently for about 5 minutes.
- 23. Distribute the apple sauerkraut onto the plates.
- 24. Place the dumplings on top.
- 25. Serve the dumplings with the brown margarine.
