🍽️ Vegan Kaiser Casserole with Potatoes

Ingredients
- Broccoli 1 pc
- Cauliflower 1 pc
- Carrots 2 pcs
- Potatoes, waxy 800 g
- Garlic cloves 2 pcs
- Lemons 1 pc
- Margarine, vegan 40 g
- Wheat flour, Type 405 40 g
- Oat drink 500 ml
- Vegan fresh spread, plain 150 g
- Salt pinch
- Nutmeg, ground pinch
- Chives, fresh 10 g
- Fried onions 4 tbsp
Instructions
- 1. Preheat the oven to 200 degrees Celsius with fan.
- 2. Wash the broccoli, remove the tough stem, and cut it into small florets.
- 3. Wash the cauliflower thoroughly, remove the stem, and separate it into florets.
- 4. Peel the carrots, trim the ends, and slice them.
- 5. Peel the potatoes, wash them, and cut them into 1 cm cubes.
- 6. Peel the garlic and chop it finely.
- 7. Wash the lemon, cut it in half, and squeeze the juice from one half.
- 8. Heat the margarine and garlic in a pot over medium heat.
- 9. Stir in the flour and gradually add the oat drink.
- 10. Whisk the sauce until it is smooth and free of lumps.
- 11. Bring the sauce to a brief boil, then reduce the heat to low.
- 12. Stir in the natural vegan spread and the lemon juice.
- 13. Season the sauce to taste with salt and nutmeg.
- 14. Place the broccoli, cauliflower, carrots, potatoes, and sauce into a baking dish.
- 15. Mix everything well and distribute the ingredients evenly in the dish.
- 16. Bake the Kaiser casserole in the oven for about 30 minutes.
- 17. Wash the chives and shake them dry.
- 18. Cut the chives into fine rings.
- 19. Carefully remove the Kaiser casserole from the oven.
- 20. Serve the Kaiser casserole on plates.
- 21. Garnish the dish with fried onions and the chive rings.
