🍽️ Vegan meatballs with apple sauerkraut, mustard mashed potatoes and smoked tofu

Ingredients
- apples, red 1 pc.
- oil 4 tbsp
- sauerkraut 1 kg
- wheat beer 200 ml
- potatoes, floury 1 kg
- salt pinch
- margarine, vegan 5 tbsp
- mustard 7 tbsp
- oat drink Barista 150 ml
- onions, red 0.5 pc.
- parsley, fresh 20 g
- Vemondo vegan mince 275 g
- breadcrumbs 2 tbsp
- pepper, black ground pinch
- smoked tofu 350 g
- chives, fresh 15 g
Instructions
- 1. Wash the apple thoroughly and remove the core.
- 2. Cut the apple into small cubes.
- 3. Heat 1 tablespoon of oil in a pot.
- 4. Sauté the apple cubes for about 3 minutes.
- 5. Add the sauerkraut and wheat beer to the apple.
- 6. Let the mixture simmer covered on medium heat for approx. 20 minutes.
- 7. Peel the potatoes and wash them.
- 8. Cut the potatoes into coarse cubes.
- 9. Place the potatoes in a pot with enough salted water.
- 10. Bring the water to a boil and cook the potatoes until tender for approx. 20 minutes.
- 11. Drain the water and let the potatoes steam dry.
- 12. Add margarine, 3 tablespoons of mustard and oat drink Barista to the potatoes.
- 13. Mash the potatoes into a smooth puree.
- 14. Season the mashed potatoes with salt to taste.
- 15. Halve the onion and peel it.
- 16. Dice the onion finely.
- 17. Wash the parsley and shake it dry.
- 18. Finely chop the parsley.
- 19. Place the vegan mince, onion cubes and parsley in a bowl.
- 20. Add the breadcrumbs to the mixture.
- 21. Knead all ingredients well together.
- 22. Season the mixture with salt and pepper.
- 23. Form small balls with a diameter of approx. 2 cm from the mixture.
- 24. Cut the smoked tofu into approx. 2 cm cubes.
- 25. Heat 3 tablespoons of oil in a frying pan on high heat.
- 26. Fry the meatballs and smoked tofu for approx. 5 minutes on all sides.
- 27. Wash the chives and shake them dry.
- 28. Cut the chives into fine rings.
- 29. Distribute the sauerkraut and mashed potatoes onto the plates.
- 30. Place the meatballs and smoked tofu on top.
- 31. Garnish the dish with chives and 1 tablespoon of mustard each.
- 32. Serve the food and enjoy your meal!
