🍽️ Vegan Gyros Bowl with Zucchini Bulgur

Ingredients
- oil 4 tbsp
- Vemondo vegan gyros with onions 300 g
- salad cucumbers 2 pcs
- salt pinch
- lemons 1 pcs
- cherry tomatoes 200 g
- vegan shepherd's delight 150 g
- parsley, fresh 15 g
- garlic cloves 2 pcs
- soy yogurt 200 g
- olive oil 2 tbsp
- pepper, black ground pinch
- veggie mix zucchini bulgur 400 g
Instructions
- 1. Heat 2 tablespoons of oil in a frying pan over medium to high heat.
- 2. Fry the gyro pieces in it for about 5 to 6 minutes.
- 3. Wash the cucumbers thoroughly.
- 4. Halve the cucumbers and scrape out the seeds.
- 5. Grate the cucumber flesh coarsely.
- 6. Place the grated cucumbers in a bowl.
- 7. Sprinkle the cucumbers with salt and mix well.
- 8. Let the salted cucumbers sit for about 10 minutes.
- 9. Wash the lemon.
- 10. Halve the lemon.
- 11. Squeeze the juice from the lemon.
- 12. Wash the tomatoes.
- 13. Halve the tomatoes.
- 14. Cut the feta into small cubes.
- 15. Wash the parsley.
- 16. Shake the parsley dry.
- 17. Pluck the leaves from the stems.
- 18. Finely chop the parsley leaves.
- 19. Peel the garlic cloves.
- 20. Finely chop the garlic.
- 21. Squeeze the marinated cucumbers with your hands.
- 22. Pour off the released juice.
- 23. Return the squeezed cucumbers to the bowl.
- 24. Add the soy yogurt to the cucumbers.
- 25. Add the chopped garlic.
- 26. Mix all ingredients for the tzatziki well.
- 27. Add the squeezed lemon juice.
- 28. Add some olive oil.
- 29. Season with salt and pepper to taste.
- 30. Heat 2 tablespoons of oil in a separate frying pan over medium to high heat.
- 31. Add the frozen bulgur-zucchini mix to the pan.
- 32. Cover the pan with a lid.
- 33. Heat the mix for about 2 minutes.
- 34. Remove the lid.
- 35. Continue cooking the mix for another 6 to 8 minutes.
- 36. Distribute the warm bulgur onto four plates.
- 37. Place the tzatziki on the bulgur.
- 38. Place the halved tomatoes on top.
- 39. Place the feta cubes on top.
- 40. Place the fried gyro pieces on top.
- 41. Sprinkle the bowl with the chopped parsley.
- 42. Serve the bowl immediately.
