🍽️ Vegan Kale Pockets with Smoked Tofu and Apple

Ingredients
- kale, fresh 1 kg
- smoked tofu 175 g
- onions, yellow 1 pc
- apples, red 1 pc
- oil 2 tbsp
- vegan fresh spread, plain 150 g
- salt pinch
- pepper, black ground pinch
- puff pastry 1 pc
- soy drink 2 tbsp
- brown sugar pinch
Instructions
- 1. Preheat the oven to 200 degrees Celsius using the top and bottom heat setting.
- 2. Wash the kale thoroughly.
- 3. Tear the kale into bite-sized pieces.
- 4. Spin the kale dry.
- 5. Cube the smoked tofu into small pieces.
- 6. Halve the onion and peel it.
- 7. Dice the onion finely.
- 8. Wash the apple.
- 9. Remove the core from the apple.
- 10. Dice the apple finely.
- 11. Heat oil in a frying pan on high heat.
- 12. Fry the smoked tofu, onion, and apple for about 3 minutes.
- 13. Add the kale to the pan.
- 14. Fry the kale on medium heat for about 5 minutes.
- 15. Take a bowl.
- 16. Mix the vegan spread natural with the contents of the pan.
- 17. Season the mixture with salt and pepper.
- 18. Set the filling aside.
- 19. Roll out the puff pastry.
- 20. Cut the puff pastry into 8 equal squares.
- 21. Place about 2 to 3 tablespoons of the kale filling in the center of each square.
- 22. Fold the corners of the square together in the middle.
- 23. Form a point with the folded corners.
- 24. Brush the puff pastry with soy drink.
- 25. Sprinkle the puff pastry with a little raw cane sugar.
- 26. Bake the puff pastry pockets for about 15 minutes until golden brown.
- 27. Carefully remove the vegan kale pockets from the oven.
- 28. Serve the pockets lukewarm or cold.
