  1. 1. Preheat the oven to 200 degrees Celsius using top and bottom heat.
  2. 2. Mix cold margarine, flour, sugar, a pinch of salt, and cold water in a bowl.
  3. 3. Knead the ingredients into a smooth dough using your hands.
  4. 4. Dust a work surface with flour and roll out the dough to about 5 millimeters thick.
  5. 5. Place the dough into a greased 28-centimeter springform pan.
  6. 6. Press the dough firmly into the pan and form a border about 4 centimeters high.
  7. 7. Even out the edge with a knife and prick the base several times with a fork.
  8. 8. Bake the pastry base for about 15 minutes until golden brown.
  9. 9. Wash the kale and remove the thick stems.
  10. 10. Roughly chop the kale leaves.
  11. 11. Bring about 2 liters of salted water to a boil in a pot.
  12. 12. Add the kale to the boiling water and cook for about 5 minutes.
  13. 13. Drain the kale in a colander.
  14. 14. Immediately shock the kale with cold water.
  15. 15. Cut the smoked tofu into small cubes.
  16. 16. Halve the onions, peel them, and cut them into small cubes.
  17. 17. Heat oil in a frying pan over high heat.
  18. 18. Fry the smoked tofu and onions for about 3 minutes, turning them around.
  19. 19. Add the kale to the pan and heat everything for about 3 minutes.
  20. 20. Carefully remove the shortcrust pastry from the oven.
  21. 21. Mix soy yogurt, cornstarch, plain vegan spread, the kale mixture, and mustard in a bowl.
  22. 22. Season the mixture with salt and pepper.
  23. 23. Pour the mixture onto the shortcrust pastry.
  24. 24. Bake the quiche for another 35 minutes.
  25. 25. Remove the quiche from the oven and let it cool.
  26. 26. Cut the quiche into pieces and serve.
