🍽️ Vegan Kale Quiche with Smoked Tofu

Ingredients
- Vegan margarine 125 g
- Spelt flour, type 630 250 g
- Sugar 1 tsp
- Salt pinch
- Water 3 tbsp
- Kale, fresh 800 g
- Smoked tofu 175 g
- Onions, red 3 pcs
- Oil 1 tbsp
- Soy yogurt 3 tbsp
- Cornstarch 3 tbsp
- Vegan spread, plain 150 g
- Mustard 3 tbsp
- Pepper, black ground pinch
Instructions
- 1. Preheat the oven to 200 degrees Celsius using top and bottom heat.
- 2. Mix cold margarine, flour, sugar, a pinch of salt, and cold water in a bowl.
- 3. Knead the ingredients into a smooth dough using your hands.
- 4. Dust a work surface with flour and roll out the dough to about 5 millimeters thick.
- 5. Place the dough into a greased 28-centimeter springform pan.
- 6. Press the dough firmly into the pan and form a border about 4 centimeters high.
- 7. Even out the edge with a knife and prick the base several times with a fork.
- 8. Bake the pastry base for about 15 minutes until golden brown.
- 9. Wash the kale and remove the thick stems.
- 10. Roughly chop the kale leaves.
- 11. Bring about 2 liters of salted water to a boil in a pot.
- 12. Add the kale to the boiling water and cook for about 5 minutes.
- 13. Drain the kale in a colander.
- 14. Immediately shock the kale with cold water.
- 15. Cut the smoked tofu into small cubes.
- 16. Halve the onions, peel them, and cut them into small cubes.
- 17. Heat oil in a frying pan over high heat.
- 18. Fry the smoked tofu and onions for about 3 minutes, turning them around.
- 19. Add the kale to the pan and heat everything for about 3 minutes.
- 20. Carefully remove the shortcrust pastry from the oven.
- 21. Mix soy yogurt, cornstarch, plain vegan spread, the kale mixture, and mustard in a bowl.
- 22. Season the mixture with salt and pepper.
- 23. Pour the mixture onto the shortcrust pastry.
- 24. Bake the quiche for another 35 minutes.
- 25. Remove the quiche from the oven and let it cool.
- 26. Cut the quiche into pieces and serve.

- 28. Tip: It tastes best cold the next day.
