🍳 Vegan Breakfast Wraps with Crumbled Tofu

Ingredients
- tofu, plain 200 g
- onions, red 1 pc.
- oil 2 tbsp
- scrambled egg seasoning 2 tbsp
- turmeric, ground pinch
- soy yogurt 5 tbsp
- salt pinch
- pepper, black ground pinch
- avocado 1 pc.
- vine tomatoes 2 pcs.
- smoked tofu 1 pc.
- wraps 4 pcs.
- vegan spread slices 4 slices
- vegan fresh spread, pepper 4 tbsp
Instructions
- 1. Take the tofu and crumble it into small pieces using your hands.
- 2. Cut the onion in half, peel it, and dice it into fine cubes.
- 3. Heat oil in a frying pan over medium heat.
- 4. Add the crumbled tofu and onion cubes to the pan.
- 5. Fry the mixture for about 5 minutes, stirring constantly, until lightly browned.
- 6. Add the scramble seasoning, a pinch of turmeric, and the soy yogurt.
- 7. Mix everything well and continue frying for another 2 minutes.
- 8. Finally, season the tofu mixture with salt and pepper.
- 9. Cut the avocado in half and remove the pit.
- 10. Scoop out the flesh with a spoon and slice it into thin pieces.
- 11. Wash the tomatoes and remove the hard stem.
- 12. Slice the tomatoes into thin pieces.
- 13. Slice the smoked tofu into thin pieces.
- 14. Make one cut in each wrap from the edge to the center.
- 15. Mentally divide the wrap into four sections.
- 16. Fill the individual sections with vegan cheese slices, paprika spread, the scrambled tofu mixture, avocado, tomato, and smoked tofu.
- 17. Season the filling with salt and pepper.
- 18. Fold the wrap starting at the cut, folding section by section.
- 19. Heat a frying pan over medium heat.
- 20. Toast the tortillas without fat for about 3 minutes, turning them until golden brown on both sides.
- 21. Place the finished wraps on a plate and serve.
