🍽️ Vegan Frikadellen with Sweet Potato Mash and Fried Peas

Ingredients
- Sweet potatoes 800 g
- Salt pinch
- Oat drink 50 ml
- Vegan fresh spread, pepper 100 g
- Vemondo grating delight 80 g
- Nutmeg, ground pinch
- Peas, frozen 200 g
- Oil 1 tbsp
- Vegan snack frikadellen 600 g
- Pepper, black ground pinch
Instructions
- 1. Peel the sweet potatoes and cut them into approx. 2–3 cm cubes.
- 2. Place the sweet potato cubes in a pot with a little salted water and cook for approx. 15 minutes until very soft.
- 3. Drain the sweet potatoes in a sieve, let them drain well, and return them to the pot.
- 4. Mash the sweet potatoes with a potato masher.
- 5. Add oat drink, Vemondo spread Paprika, and Reibegenuss, and mix everything well.
- 6. Season the mash with salt and nutmeg to taste.
- 7. Bring approx. 1 liter of salted water to a boil in another pot.
- 8. Add the peas to the boiling water and warm them for approx. 3 minutes.
- 9. Drain the peas in a sieve.
- 10. Heat 1 tbsp of oil in a frying pan over medium heat.
- 11. Fry the vegan mini-frikadellen and the peas for approx. 3 minutes.
- 12. Season the frikadellen and peas with salt and pepper.
- 13. Plate the sweet potato mash and place the vegan mini-frikadellen and peas on top.
