🍲 Vegan French Onion Soup

Ingredients
- onions, yellow 300 g
- garlic cloves 2 pcs
- margarine, vegan 100 g
- brown sugar 1 tbsp
- wheat flour, type 405 1 tbsp
- vegetable broth 1 L
- bay leaves, dried 2 pcs
- salt pinch
- pepper, black ground pinch
- cumin, whole pinch
- rustic bread 4 slices
- Vemondo grating delight 100 g
Instructions
- 1. Preheat the oven to 200 degrees Celsius with top heat.
- 2. Halve the onions and peel them.
- 3. Cut the onions into thin half-rings.
- 4. Peel the garlic.
- 5. Finely dice the garlic.
- 6. Melt the margarine in a pot over medium heat.
- 7. Add the onions and garlic to the pot.
- 8. Sprinkle sugar over the vegetables.
- 9. Caramelize the mixture while stirring constantly for 5 to 10 minutes.
- 10. Dust the mixture with flour.
- 11. Roast the mixture until golden brown while stirring constantly for about 2 minutes.
- 12. Deglaze the mixture with the broth.
- 13. Add the bay leaves to the soup.
- 14. Simmer the soup over low heat for about 15 minutes.
- 15. Season the soup with salt, pepper, and cumin.
- 16. Divide the soup among oven-safe soup bowls.
- 17. Place a slice of peasant bread on each bowl.
- 18. Sprinkle the grated cheese substitute over the bread.
- 19. Bake the soups in the oven for 5 to 7 minutes until golden brown.
- 20. Serve the vegan onion soup.
