🍽️ Vegan Falafel Wraps with Soy Yogurt Mint Sauce

Ingredients
- lemons 1 pc.
- garlic cloves 1 pc.
- mint, fresh 15 g
- soy yogurt 150 g
- Vemondo Vegan Cream 100 g
- salt pinch
- pepper, black ground pinch
- Dürüm Wraps 4 pc.
- olive oil 3 tbsp
- falafel 300 g
- cucumbers 0.5 pc.
- vine tomatoes 2 pc.
- arugula 40 g
- parsley, fresh 20 g
Instructions
- 1. Wash the lemon thoroughly.
- 2. Finely grate about one teaspoon of lemon zest.
- 3. Cut the lemon in half and squeeze the juice from one half.
- 4. Peel the garlic and chop it finely.
- 5. Wash the mint and shake it dry.
- 6. Chop the mint finely.
- 7. Put the soy yogurt and vegan cream into a bowl.
- 8. Add the chopped garlic.
- 9. Add the lemon zest.
- 10. Add one tablespoon of lemon juice.
- 11. Add the chopped mint.
- 12. Mix all ingredients well.
- 13. Season the sauce with salt and pepper to taste.
- 14. Chill the soy yogurt mint sauce.
- 15. Preheat a pan on medium heat.
- 16. Warm the Durum wraps in the pan.
- 17. Turn the wraps to warm both sides.
- 18. Let the wraps warm for about two minutes each side.
- 19. Add three tablespoons of olive oil to the pan.
- 20. Heat the oil.
- 21. Fry the falafel in the oil.
- 22. Fry the falafel for about five minutes.
- 23. Fry the falafel until golden brown.
- 24. Wash the cucumbers.
- 25. Remove the ends of the cucumbers.
- 26. Slice the cucumbers thinly at a slight angle.
- 27. Wash the tomatoes.
- 28. Remove the core from the tomatoes.
- 29. Slice the tomatoes into thin slices.
- 30. Wash the arugula.
- 31. Spin the arugula dry.
- 32. Wash the parsley.
- 33. Shake the parsley dry.
- 34. Pick the parsley leaves off the stems.
- 35. Spread the soy yogurt mint sauce on the Durum wraps.
- 36. Fill the wraps with falafel as desired.
- 37. Fill the wraps with cucumber slices.
- 38. Fill the wraps with tomato slices.
- 39. Fill the wraps with arugula.
- 40. Fill the wraps with parsley leaves.
- 41. Drizzle the filled wraps with a little more soy yogurt mint sauce.
- 42. Roll the wraps tightly.
- 43. Cut the wraps in half.
- 44. Serve the wraps.
