  3. 3. Cut the lemon in half and squeeze the juice from one half.
  4. 4. Peel the garlic and chop it finely.
  5. 5. Wash the mint and shake it dry.
  6. 6. Chop the mint finely.
  7. 7. Put the soy yogurt and vegan cream into a bowl.
  8. 8. Add the chopped garlic.
  9. 9. Add the lemon zest.
  10. 10. Add one tablespoon of lemon juice.
  11. 11. Add the chopped mint.
  12. 12. Mix all ingredients well.
  13. 13. Season the sauce with salt and pepper to taste.
  14. 14. Chill the soy yogurt mint sauce.
  15. 15. Preheat a pan on medium heat.
  16. 16. Warm the Durum wraps in the pan.
  17. 17. Turn the wraps to warm both sides.
  18. 18. Let the wraps warm for about two minutes each side.

  34. 34. Pick the parsley leaves off the stems.
  35. 35. Spread the soy yogurt mint sauce on the Durum wraps.
  36. 36. Fill the wraps with falafel as desired.
  37. 37. Fill the wraps with cucumber slices.
  38. 38. Fill the wraps with tomato slices.
  39. 39. Fill the wraps with arugula.
  40. 40. Fill the wraps with parsley leaves.
  41. 41. Drizzle the filled wraps with a little more soy yogurt mint sauce.
  42. 42. Roll the wraps tightly.
  43. 43. Cut the wraps in half.
  44. 44. Serve the wraps.
