🍽️ Vegan Pea Pancakes with Mushroom Topping

Ingredients
- peas, frozen 200 g
- lemons 1 pc.
- soy drink 180 ml
- wheat flour, Type 405 200 g
- baking powder 1 packet
- sugar 0.5 tsp
- spring onions 2 pc.
- mushrooms, white 250 g
- chives, fresh 10 g
- oil 5 tbsp
- balsamic vinegar, light 2 tbsp
- salt pinch
- pepper, black ground pinch
Instructions
- 1. Rinse the peas thoroughly under warm water in a sieve and let them drain well.
- 2. Cut the lemon in half and squeeze out the juice.
- 3. Mix the lemon juice with the soy drink in a tall container.
- 4. Mix the flour, baking powder, and sugar well together in a bowl.
- 5. Pour the soy drink-lemon mixture into the dry ingredients.
- 6. Stir everything quickly into a smooth batter.
- 7. Gently fold half of the peas into the batter.
- 8. Let the batter rest for about 5 to 10 minutes.
- 9. Wash the spring onions and cut off the root ends.
- 10. Slice the spring onions into thin rings.
- 11. Clean the mushrooms with kitchen paper if necessary.
- 12. Cut the mushrooms into quarters or eighths depending on their size.
- 13. Wash the chives and dry them.
- 14. Cut the chives into small rings.
- 15. Heat 2 tablespoons of oil in a pan over high heat.
- 16. Fry the mushrooms for about 4 minutes over high heat.
- 17. Reduce the heat and add 1 tablespoon of oil.
- 18. Add the spring onions to the pan and fry them for about 2 minutes.
- 19. Stir the remaining peas into the mushroom mixture.
- 20. Fry the mixture for another 2 minutes.
- 21. Deglaze the pan with balsamic vinegar.
- 22. Season the mushroom mixture with salt and pepper.
- 23. Remove the mushroom mixture from the pan and set it aside in a bowl.
- 24. Wipe the pan clean.
- 25. Heat 1 tablespoon of oil in the pan over medium heat.
- 26. Shape 2 tablespoons of batter into small pancakes in the pan.
- 27. Bake the pancakes for about 2 minutes until small bubbles form on the surface.
- 28. Carefully flip the pancakes.
- 29. Bake the pancakes for another 1 minute until golden brown.
- 30. Place the finished pancakes on a plate.
- 31. Repeat the process until all the batter is used.
- 32. Serve the vegan pea pancakes on plates.
- 33. Place the mushroom topping over the pancakes.
- 34. Sprinkle the pancakes with the chopped chive rings.
