  5. 5. Pour the soy drink-lemon mixture into the dry ingredients.
  6. 6. Stir everything quickly into a smooth batter.
  7. 7. Gently fold half of the peas into the batter.
  8. 8. Let the batter rest for about 5 to 10 minutes.
  9. 9. Wash the spring onions and cut off the root ends.
  10. 10. Slice the spring onions into thin rings.
  11. 11. Clean the mushrooms with kitchen paper if necessary.
  12. 12. Cut the mushrooms into quarters or eighths depending on their size.
  13. 13. Wash the chives and dry them.
  14. 14. Cut the chives into small rings.
  15. 15. Heat 2 tablespoons of oil in a pan over high heat.
  16. 16. Fry the mushrooms for about 4 minutes over high heat.
  17. 17. Reduce the heat and add 1 tablespoon of oil.
