  1. 1. Mix spelt flour, cane sugar, 1 tsp vanilla sugar, a pinch of salt, and baking powder in a bowl.
  2. 2. Add 40 g margarine, oil, water, and vinegar.
  3. 3. Stir everything with a whisk until you have a smooth batter.
  4. 4. Preheat the oven to 180 °C fan.
  5. 5. Lightly grease a large baking dish with 10 g margarine.
  6. 6. Pour two-thirds of the batter into the dish.
  7. 7. Stir cocoa powder into the remaining batter until smooth.
  8. 8. Spread the dark batter over the light batter.
  9. 9. Drag a fork through the batter to create a marbled pattern.
  10. 10. Drain the sour cherries in a sieve.
  11. 11. Distribute the cherries evenly in the batter.
  12. 12. Drag a fork through the batter again to create a pattern.
  13. 13. Bake the cake for approx. 40 minutes on the middle rack.
  14. 14. Let the cake cool down completely.
  15. 15. Mix cornstarch, sugar, 1 tbsp vanilla sugar, and 50 ml oat drink in a tall bowl.
  16. 16. Bring the remaining oat drink to a boil.
  17. 17. Stir the starch mixture into the hot drink while stirring constantly.
  18. 18. Let the mixture boil for approx. 2 minutes.
  19. 19. Add 120 g margarine.
  20. 20. Let the cream cool down a bit.
  21. 21. Spread the pudding cream onto the cake.
  22. 22. Bring approx. 600 ml water to a boil in a pot.
  23. 23. Chop the chocolate.
  24. 24. Melt the chocolate with coconut oil over a hot water bath in a metal bowl.
  25. 25. Spread the liquid chocolate mixture over the pudding cream.
  26. 26. Let the cake cool for approx. 10 minutes until the chocolate sets.
  27. 27. Drag a fork through the chocolate to create waves.
  28. 28. Chill the cake.
  29. 29. Cut the Donauwelle into 10 pieces.
  30. 30. Serve the cake.
