🍰 Vegan Crepes with Passion Fruit-Peach-Coconut Dessert

Ingredients
- Oat drink 500 ml
- Spelt flour, Type 630 240 g
- Baking powder 1 tsp
- Salt pinch
- Oil 3 tbsp
- Mineral water, classic 100 ml
- Raspberries, fresh 100 g
- Mint, fresh 20 g
- Passion fruit-peach-coconut dessert 450 g
Instructions
- 1. Preheat the oven to 100 degrees Celsius using the top and bottom heat setting.
- 2. Take a bowl and add oat drink, flour, baking powder, and a pinch of salt.
- 3. Mix the ingredients in the bowl thoroughly.
- 4. Let the batter rest for about 5 minutes.
- 5. Take a medium-sized pan and brush it with 1 teaspoon of oil.
- 6. Heat the pan on medium heat.
- 7. Add sparkling water to the batter.
- 8. Stir the batter with the sparkling water again until well combined.
- 9. Take 1 ladle of the batter and pour it into the hot pan.
- 10. Tilt the pan to spread the batter thinly and evenly.
- 11. Cook the crepe for about 2 minutes on the first side.
- 12. Flip the crepe and cook it for another 2 minutes on the other side.
- 13. Remove the finished crepe from the pan and place it on a plate.
- 14. Repeat the process with the remaining batter to bake more crepes.
- 15. Keep the finished crepes warm in the preheated oven.
- 16. Wash the raspberries under running water.
- 17. Let the raspberries drain in a sieve.
- 18. Wash the mint under running water.
- 19. Shake the mint dry to remove excess water.
- 20. Pluck the mint leaves from the stems.
- 21. Take the crepes out of the oven.
- 22. Place 3 tablespoons of passion fruit-peach-coconut dessert onto each crepe.
- 23. Roll up the crepes or fold them into quarters.
- 24. Arrange the filled crepes on plates.
- 25. Garnish the crepes with the raspberries and mint leaves.
- 26. Serve the crepes with some extra passion fruit-peach-coconut dessert.
