  1. 1. Preheat the oven to 160 degrees Celsius with top and bottom heat.
  2. 2. Wash the apricots thoroughly.
  3. 3. Halve the apricots and remove the pits.
  4. 4. Wash the lemon.
  5. 5. Finely grate about one teaspoon of lemon zest.
  6. 6. Halve the lemon.
  7. 7. Squeeze out about one teaspoon of lemon juice.
  8. 8. Put flour, sugar, oat drink, and the lemon zest into a bowl.
  9. 9. Stir the ingredients until smooth with no lumps remaining.
  10. 10. Drain the chickpeas into a sieve.
  11. 11. Catch the draining liquid.
  12. 12. Put 200 milliliters of the chickpea liquid into a tall container.
  13. 13. Add a splash of lemon juice.
  14. 14. Whisk the mixture until frothy using a hand mixer with beaters.
  15. 15. Gently fold the whipped mass into the batter.
