🍰 Vegan Clafoutis with Apricots

Ingredients
- Apricots, fresh 350 g
- Lemons 0.5 pc
- Wheat flour, Type 405 100 g
- Sugar 70 g
- Oat drink Barista 200 ml
- Chickpeas from the can 800 g
- Powdered sugar 2 tbsp
Instructions
- 1. Preheat the oven to 160 degrees Celsius with top and bottom heat.
- 2. Wash the apricots thoroughly.
- 3. Halve the apricots and remove the pits.
- 4. Wash the lemon.
- 5. Finely grate about one teaspoon of lemon zest.
- 6. Halve the lemon.
- 7. Squeeze out about one teaspoon of lemon juice.
- 8. Put flour, sugar, oat drink, and the lemon zest into a bowl.
- 9. Stir the ingredients until smooth with no lumps remaining.
- 10. Drain the chickpeas into a sieve.
- 11. Catch the draining liquid.
- 12. Put 200 milliliters of the chickpea liquid into a tall container.
- 13. Add a splash of lemon juice.
- 14. Whisk the mixture until frothy using a hand mixer with beaters.
- 15. Gently fold the whipped mass into the batter.
- 16. Grease a tart pan.
- 17. Pour the batter into the pan.
- 18. Distribute the apricot halves on the mass.
- 19. Place the apricots with the cut side facing up.
- 20. Press the apricots slightly into the mass.
- 21. Bake the clafoutis for about 30 minutes.
- 22. Let the pastry cool down a bit.
- 23. Dust the clafoutis with powdered sugar.
- 24. Cut the clafoutis into pieces.
- 25. Serve the dessert.
